"When I make this, I feel like a kid in my mom's kitchen. The best part is watching the marshmallows bubble and toast."

Categories     side-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 6

2 tablespoons unsalted butter, plus more for the baking dish
1 cup packed light brown sugar
3 1/2 pounds sweet potatoes
1 lemon, sliced and seeded
1/2 cup chopped pecans
3 cups marshmallows

Steps:

  • Preheat the oven to 350 degrees F. Melt the butter in a large pot. Stir in the brown sugar and 1/2 cup water. Bring to a boil, then reduce the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
  • Bring a large pot of water to a boil. Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
  • Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Place the lemon slices on top and bake 35 minutes, spooning the syrup over the potatoes twice during that time. The potatoes are done when they are fork-tender.
  • Remove from the oven, discard the lemon slices and stir in the pecans. Top with the marshmallows. Turn the oven up to 400 degrees F, place the baking dish back in the oven, and cook until the marshmallows puff and turn brown, about 10 more minutes.

MASHED SWEET POTATOES WITH MAPLE AND BROWN BUTTER

Mashed Sweet Potatoes With Maple and Brown Butter image

This recipe is a grown-up take on sweet potatoes with brown sugar and marshmallows. A generous swirl of browned butter and maple syrup give the potatoes an earthy sweetness and great depth of flavor, while salted, toasted pecans sprinkled on top add a savory crunch. To save time on Thanksgiving, toast the pecans and make the brown butter up to a day in advance. Simply store the pecans in an airtight container, and the brown butter in the refrigerator. (Gently melt the butter in the microwave before using.)

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 7

4 pounds sweet potatoes, peeled and cut into 1-inch cubes
3/4 cup raw pecans (optional)
2 teaspoons kosher salt, plus more to taste
10 tablespoons unsalted butter (1¼ sticks)
1/2 cup whole milk
3 tablespoons maple syrup, plus more to taste
1/2 teaspoon black pepper, plus more to taste

Steps:

  • Bring a large pot of water to a boil. Add the sweet potatoes and cook, uncovered, stirring occasionally, for about 15 to 20 minutes, until very tender when pierced with a fork.
  • Meanwhile, toast the pecans (optional): Place the pecans in a medium sauté pan. Cook over medium-low heat, tossing often, for 3 to 5 minutes, until lightly toasted. Transfer to a cutting board, and roughly chop. Sprinkle generously with salt, and set aside. Wipe out the pan with a paper towel.
  • In the same pan, melt the butter over medium heat. Cook, watching carefully and stirring occasionally with a silicone spatula, until brown bits appear and the butter gives off a nutty aroma, about 3 minutes. Remove from the heat immediately. Carefully pour the melted butter into a small heatproof bowl, scraping the pan with a spatula to get all of the brown bits. Set aside.
  • Drain the cooked potatoes, and add them to the bowl of a stand mixer fitted with the paddle attachment. Add the milk, 3 tablespoons maple syrup, 2 teaspoons salt and pepper and mix on medium-low speed until the potatoes are creamy and smooth. Add the reserved brown butter and mix until just incorporated.
  • Transfer the potatoes to a shallow serving bowl, sprinkle with the reserved pecans, and drizzle with maple syrup. Serve warm. (The potatoes may be kept warm, covered, in a low oven for up to 30 minutes. Add the pecans just before serving.)

Tips for Making Mashed Sweet Potatoes with Marshmallows

  • Choose the Right Sweet Potatoes: Use firm and medium-sized sweet potatoes for a creamy and smooth texture.
  • Boil or Roast: You can either boil or roast the sweet potatoes. Boiling is quicker, but roasting brings out a more caramelized flavor.
  • Cook until Tender: Pierce the sweet potatoes with a fork to check if they are tender. They should be easily pierced through.
  • Drain Well: Drain the sweet potatoes thoroughly to remove excess water and prevent the dish from becoming watery.
  • Season Generously: Don't be shy with the seasonings. Add salt, pepper, cinnamon, nutmeg, and ginger to taste.
  • Use Real Butter and Milk: Butter and milk add richness and creaminess to the dish. For a vegan option, use plant-based butter and milk.
  • Don't Overmix: Overmixing can make the sweet potatoes gluey. Mix until just combined.
  • Add Marshmallows at the End: Fold in the marshmallows last to prevent them from melting completely. You still want some gooey marshmallows in the dish.

Conclusion

Mashed sweet potatoes with marshmallows is a classic Southern dish that is perfect for Thanksgiving, Christmas, or any special occasion. It is a sweet, creamy, and comforting side dish that is loved by people of all ages. With these tips, you can make the best mashed sweet potatoes with marshmallows that will be a hit at your next gathering. Happy cooking!
