Yield 4 servings

Number Of Ingredients 6

1 tablespoon high-quality matcha powder
3 (14-ounce) cans full-fat coconut milk
1/4 cup brown rice syrup or pure maple syrup
2 tablespoons high-quality vodka
1 teaspoon organic vanilla extract
Toppings: Natural sprinkles, dark chocolate chips, fresh mint, toasted coconut shavings (optional)

Steps:

  • Place the matcha into a bone-dry, high-powered blender (like a Vitamix). Next, pour in the coconut milk, brown rice or maple syrup, vodka, and vanilla. Blend all the ingredients on high speed for at least a minute. The creamier the texture of the ice cream base, the better. Pour the mixture into an ice cream maker and, following the machine's instructions, churn it up. When ready, serve immediately.

NO-CHURN MATCHA ICE CREAM

No-Churn Matcha Ice Cream image

Matcha, a green tea powder popular in Japan, shines in this simple no-churn ice cream, which is delicious alone or topped with toasted coconut and chocolate chips.

Categories     dessert

Time 3h10m

Yield 6 to 8 servings

Number Of Ingredients 5

One 14-ounce can sweetened condensed milk (about 1 cup)
2 teaspoons matcha powder
1 teaspoon pure vanilla extract
Pinch fine salt
1 cup cold heavy cream

Steps:

  • Whisk together the condensed milk, matcha powder, vanilla and salt in a large bowl and set aside.
  • Whip the cream with an electric mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1/2 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, cover with plastic wrap and freeze until solid and scoopable, about 3 hours or up to overnight.

Tips:

  • Use high-quality matcha powder for the best flavor. Culinary-grade matcha is more affordable than ceremonial-grade, but it still produces a delicious ice cream.
  • Don't over-churn the ice cream. Over-churning can make the ice cream icy and grainy.
  • Use fresh coconut milk for the best flavor. Canned coconut milk can be used, but it won't taste as good.
  • Add the matcha powder to the ice cream base after it has been churned. This will prevent the matcha from clumping.
  • Serve the ice cream immediately or store it in the freezer for up to 2 weeks.

Conclusion:

This matcha coconut ice cream is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. So next time you are looking for a unique and flavorful dessert, give this matcha coconut ice cream a try. You won't be disappointed!
