This is a recipe that we used growing up on Maui. We mostly used it to marinade chicken or beef short rips and then grill the. Because of the sugar content, like barbecue sauce, be careful because it burns easily. I always cook on the grill using indirect heat.

- Grate ginger root, crush garlic, and dice scallion. Mix all ingredients together until sugar dissolves pretty well.

You can marinate over night or just an hour... of course like most things the longer the marinating the stronger the flavor.
