Each ingredient represents a team member. Onion= Mand1642 a lovely addition to any dish and very versatile. Tomatoes = Kumquat cause she loves them and the colour red and she can turn saucy LOL. Cilantro =Wigal our outdoorsy gal that loves to hike up the flavour of many Mexican dishes. Garlic = Lazychef2 she loves garlic and adds great taste to any meal. Haberno chilis= wicked cook 46 she is hot as in hot flashes but watch out she has an nasty kick. Lime juice= Ice Cool Kitty hails from Hawaii where you put the lime in the coconut . Tequila = Sarah jayne watch out for this one she sneaks up on you and makes you forget your name . Black Olives = mommy2 peanuts . Cumin= Pneuma one spicy gal . Sweet red peppers=cookiejarvis. salt = kumama since she is a Grandmother and they are the salt of the Earth NOTE: wear gloves when dealing with peppers. You can cut back on the amount of peppers to lessen the heat and toss the seeds for less heat.You can also use a different pepper depending on how hot you like. Habernos are HOT !!!! 5 habanero chiles, roasted
4 amarillo chiles
3 scallions, finely chopped
1 grapefruit, juiced
1 lime, zested and juiced
1 bunch cilantro, leaves picked and chopped

Steps:

  • Soak the habanero and amarillo chiles in hot water for approximately 10 minutes. Remove the chiles from the water and scrape and deseed them. Place the chiles into a food processor and add enough of the soaking liquid to cover a quarter of the way. Puree into a fine paste. Place the puree into a bowl and add in the chopped scallions, fruit juices, lime zest, and chopped cilantro. Mix well, season with salt and pepper, and serve warm.

1 orange
1 small grapefruit
1 large lemon
1/2 cup chopped fresh cilantro leaves
1/2 habanero or other chile, seeded and minced, or to taste
Salt
2 tablespoons oil
4 red snapper fillets, 4 to 6 ounces each, preferably skin on (and scaled)

Steps:

  • Heat oven to 450 degrees F.
  • Cut orange in half horizontally and section it as you would a grapefruit; do this over a bowl to capture all its juice. Remove seeds and combine flesh and juice in bowl. Repeat with grapefruit and lemon. Stir in cilantro, chopped habanero, and salt.
  • Put oil in a nonstick or cast-iron skillet over medium-high heat. A minute later, add fish, skin-side down; season top with salt. Cook until skin begins to crisp, 3 or 4 minutes, then transfer to oven. Cook another 3 or 4 minutes, or until a thin-bladed knife meets little resistance when inserted into thickest part of fish. Serve fish with Mayan citrus salsa (xec), immediately.

4 cloves garlic, minced
1 (15 ounce) can sliced peaches, drained
¼ cup dark molasses
¼ cup honey
¼ cup brown sugar

16 medium tomatillos (about 2 pounds), husked, rinsed
1/2 medium white onion
4 garlic cloves, peeled
1 1 1/2-inch-long fresh habanero chile
1/2 cup chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
1 teaspoon salt

Steps:

  • Preheat broiler. Line rimmed baking sheet with foil. Arrange tomatillos, onion, garlic, and chile on prepared baking sheet. Broil until vegetables blacken in spots, about 5 minutes per side for chile and about 10 minutes per side for tomatillos, onion, and garlic.

1 tablespoon minced garlic
1/3 cup virgin olive oil
6 ripe plum tomatoes, halved freshly ground black pepper
10 habanero peppers
1/4 cup lime juice (about 2 limes)
1/4 cup chopped cilantro

Steps:

  • Combine tablespoon of olive oil and garlic and mix well.
  • Rub tomato halves with this mixture, sprinkle with salt and freshly cracked pepper and roast in 500-degree oven until they begin to take o some serious color, about 15 to 20 minutes.
  • Remove from oven, cool to room temperature and dice.
  • Meanwhile, grill habanero peppers over a medium-hot fire until slightly colored, 2 to 3 minutes.
  • Remove peppers from fire and mince.
  • Be very careful when working with this pepper.
  • Wear gloves when mincing it, and if you get any of the juice on your skin, wash it off with a mild bleach solution, which neutralizes the capsaicin.
  • Also, be sure not to rub your eyes while working with these peppers, and wash your hands well after you're done.
  • These little guys are incendiary.
  • In medium-size bowl, combine tomatoes, peppers, 1/4 cup olive oil, lime juice and cilantro, mix well, and prepare for takeoff.

3 fresh jalapeno peppers
2 onions, finely chopped
2 tablespoons garlic, minced
1 tablespoon white sugar
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 (7 ounce) can diced green chile pepper
½ cup minced fresh cilantro
2 limes, juiced
7 (15 ounce) cans canned tomatoes
1 habanero pepper, seeded

Steps:

  • Roast jalapenos over a grill or gas burner until completely blackened. Seal in a plastic bag or a bowl covered with plastic wrap, and allow to steam until skins are loosened. When cool, remove skin, stem, and seeds.
  • Place jalapenos, onions, garlic, sugar, salt, and pepper into the bowl of a blender or food processor. Pulse to chop and blend, then pour into a large bowl, and mix with the can of green chiles, cilantro, and lime juice. Pulse the tomatoes in batches to desired size, and add to green chile mixture.
  • Return one cup of chopped tomatoes to the blender along with the habanero, and puree well. Strain the puree to remove any large pieces of habanero, and add to the tomatoes. Mix well, cover, and chill in the refrigerator at least one hour to allow flavors to blend.
