CHURRASCO (ARGENTINE GRILLED MEAT MARINADE )
This is a marinade for the churrasco dish. In Argentina, where this style of cooking developed, "churrasco" actually refers to many types of meats prepared on the grill. It's also popular with Nicaraguans. The churrasco cut steak is a long flat cut of skirt steak, cut from the "plate" of the cow. You might find it sold at some butcher shops as a "plate" steak. Don't confuse it with the flank steak, a similar cut, but NOT the same! The churrasco steak is typically marinated to make it tender and full of flavour. Serve topped with Recipe #456210. I did not include marinating time. Enjoy!

Steps:
- Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in orange juice, lime juice, lemon juice, onion, and oregano. Let sit at room temperature for 30 minutes or longer. Whisk the garlic-orange juice mixture with the olive oil until well blended.
- Preparing the Meat: Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight.
- Grill the marinated meat outdoors on the barbecue. (Make sure your coals are hot and white!). For the steak - you can cook them however you like your it -- from rare to well done. However, the rarer the meat, the more tender and flavorful!
- Serve the meat with the Recipe #456210.

HONEY MUSTARD MEAT MARINADE
Steps:
- Combine All wet ingredients together in a large bowl. You will add the meat right to this bowl, so oversize it a little to allow for this. Once thouroughly mixed, add all dry ingredients and mix well. Add Protein of your choice and marinate overnight. I like to make kebobs and grill them, but this will work as a glaze as well. Remove all spices except salts and add ginger for a perfect fish sauce, add apple cider for pork, add a fistful of dried herbs for poultry like turkey or game fowl. The liquids provide a good protein base for a variety of food opputunities.

LAB-TESTED ANTI-CANCER MARINADE FOR YOUR FAV GRILLED MEAT
This is a recipe I saved out of a usaweekend magazine years ago. I tidied it away and, of course couldn't find it again, until today. So I thought I would copy it here where I can always find it and you can too. I have put down 4 servings, but of course it will depend on what you'll be grilling.

Steps:
- Mix all in a large bowl or zip bag. Add the meat of your choice; coat all sides. Marinate 5-10 minutes. (You may soak longer to intensify flavors, but tests show longer marination does not increase anti-cancer activity.) Remove meat from marinade and place on hot grill. Remove meat from grill as soon as it's done: Longer grilling produces more carcinogens (cancer-causing agents).
Tips:
- Choose the right marinade for your meat. Different marinades work best with different types of meat. For example, acidic marinades (such as those made with citrus juice or vinegar) are good for tenderizing tough cuts of meat, while oil-based marinades (such as those made with olive oil or yogurt) are good for keeping meat moist.
- Make sure your marinade is flavorful. The marinade is what will give your meat its flavor, so make sure it's packed with herbs, spices, and other flavorings.
- Let your meat marinate for at least 30 minutes, but no longer than 24 hours. This will give the marinade time to penetrate the meat and infuse it with flavor.
- Turn your meat occasionally while it's marinating. This will help to ensure that the marinade is evenly distributed.
- Discard the marinade after you're finished. The marinade may contain harmful bacteria that can contaminate your food.
Conclusion:
Marinating meat is a great way to add flavor and tenderness to your dishes. By following these tips, you can create delicious, flavorful marinades that will make your meat the star of the show. So next time you're grilling, roasting, or baking meat, don't forget to marinate it first!
