THE BEST OLD FASHIONED MEATLOAF RECIPE YOU WILL EAT

The Best Old Fashioned Meatloaf Recipe You Will Eat image

This old-fashioned meatloaf recipe has been passed down for a few generations and is still one of my favorites meatloaf recipes ever! See why!

Categories     Dinner

Time 1h15m

Number Of Ingredients 11

2 eggs
3/4 cup milk
1/2 cup fine dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons snipped parsley
1 teaspoon salt
1/2 teaspoon ground sage
1 1/2 pounds ground beef
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard

Steps:

  • First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
  • Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
  • Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.
  • Then return to the oven for 10-15 minutes. This makes about six servings.

MEAT LOAF

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

This is a spicy meatloaf that enjoys additional nutrition of zucchini and may just win over those who are on the fence about regular meatloaf. The zucchini helps to keep this meatloaf moist and from packing too tightly. The cook time does not include the rest time. *Must mince onion and chili pepper as they are not pre-cooked.

OLD SCHOOL MEATLOAF

Old School Meatloaf image

The sweet heat of the chili sauce adds a fresh hit of flavor to this beefy classic.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Number Of Ingredients 11

1/2 cup breadcrumbs
1/3 cup milk
2 pounds ground beef chuck
1/4 cup shaved onion
1 shaved carrot (1/2 cup)
2 eggs
2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 cup ketchup
1 teaspoon sambal oelek
1/4 cup sweet relish

Steps:

  • Preheat oven to 325 degrees. Soak breadcrumbs in milk. Mix together beef, onions, carrot, eggs, soaked breadcrumb mixture, salt, and pepper.
  • Combine all chili sauce ingredients and set aside.
  • Place meat mixture in 8 1/2-by-4 1/2-inch loaf pan. Make three holes, spaced evenly lengthwise, in meat mixture and fill holes with 1/3 to 1/2 cup chili sauce total.
  • Bake for 40 to 45 minutes. Remove from oven and let rest 10 to 15 minutes. Pour any accumulated juices back over top of meatloaf; slice and serve.

Tips:

  • Choose the right ground beef: Opt for a blend of 80% lean and 20% fat ground beef for a moist and flavorful meatloaf.
  • Don't overmix the meatloaf mixture: Overmixing can result in a tough, dense meatloaf. Mix just until the ingredients are combined.
  • Use a variety of seasonings: Experiment with different herbs and spices to create a flavorful meatloaf. Some popular options include garlic, onion, parsley, thyme, oregano, and paprika.
  • Add moisture to the meatloaf mixture: This can be done by adding eggs, bread crumbs, or grated vegetables. Moisture will help keep the meatloaf moist and prevent it from becoming dry.
  • Shape the meatloaf into a loaf: Form the meatloaf mixture into a loaf shape and place it in a baking pan. Use your hands to smooth out the top and sides of the meatloaf.
  • Bake the meatloaf at a high temperature: This will help to create a crispy crust and juicy interior. Start by baking the meatloaf at 400°F for 30 minutes, then reduce the temperature to 350°F and continue baking for another 45-60 minutes, or until a meat thermometer inserted into the center of the meatloaf reads 160°F.
  • Let the meatloaf rest before slicing: Once the meatloaf is done baking, let it rest for 10-15 minutes before slicing. This will help the meatloaf to retain its juices and prevent it from falling apart.

Conclusion:

Meatloaf is a classic comfort food that can be enjoyed by people of all ages. By following these tips, you can make a delicious and flavorful meatloaf that your family and friends will love. Experiment with different recipes and find the one that best suits your taste. With a little practice, you'll be able to make a perfect meatloaf every time.
