3 7-ounce cans oil-packed light tuna (preferably Italian)
1/2 cup chopped fresh parsley
1/4 cup pitted kalamata olives, chopped
1/2 small red onion, thinly sliced
Juice of 1 lemon
1/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
4 whole pitas, each split into 2 rounds
4 ounces muenster or halloumi cheese, thinly sliced
3 tablespoons extra-virgin olive oil
3 cups baby arugula
1 pint cherry tomatoes, halved
2 Persian cucumbers, halved lengthwise and thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Drain the tuna, reserving 2 tablespoons oil. Toss the tuna, reserved oil, 1/4 cup parsley, the olives, red onion, the juice of 1/2 lemon, the smoked paprika, a pinch of salt and a few grinds of pepper in a medium bowl. Spread the tuna salad on 4 of the pita halves; top with the cheese and the remaining pita halves.
  • Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. One at a time, add the sandwiches and cook until lightly toasted, about 2 minutes per side. Transfer to a baking sheet and bake until warmed through, about 5 minutes.
  • Meanwhile, toss the arugula, tomatoes, cucumbers, the remaining 1/4 cup parsley, 2 tablespoons plus 1 teaspoon olive oil and the juice of the remaining 1/2 lemon in a medium bowl; season with salt and pepper. Cut the tuna melts into wedges. Serve with the arugula salad.

1/4 cup olive or vegetable oil
1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
1 tablespoon red wine vinegar
1/4 teaspoon salt
Dash of pepper
1 clove garlic, finely chopped
1/2 pound tuna, or marlin fillets, 3/4 to 1 inch thick
1 medium tomato, seeded and coarsely chopped (3/4 cup)
1/4 medium red onion, thinly sliced
2 tablespoons chopped pitted kalamata or ripe olives
2 tablespoons chopped fresh Italian or regular parsley
2 teaspoons capers
1 loaf (1/2 pound) unsliced crusty Italian, French or sourdough bread
2 leaves romaine lettuce, shredded

Steps:

  • Mix oil, thyme, vinegar, salt, pepper and garlic. In shallow glass or plastic dish or resealable food-storage plastic bag, pour half of oil mixture over fish fillets; turn fish to coat with marinade. Cover dish or seal bag and refrigerate at least 30 minutes but no longer than 1 hour. Mix remaining oil mixture, the tomato, onion, olives, parsley and capers; cover and refrigerate.
  • Heat coals or gas grill for direct heat. Remove fish from marinade; reserve marinade. Cover and grill fish 5 to 6 inches from medium heat 10 to 15 minutes, brushing 2 or 3 times with marinade and turning once, until fish flakes easily with fork. Break fish into chunks.
  • Cut off top one-third of bread loaf. Hollow out both parts, leaving 1/2-inch-thick crust. Arrange romaine on bottom half of bread. Top with fish. Spoon tomato mixture evenly over fish. Replace top piece of bread. Wrap loaf in plastic wrap or foil and refrigerate 30 to 60 minutes. Unwrap and cut into 4 pieces.

1 eggplant, sliced into strips
2 red bell peppers
2 tablespoons olive oil, divided
2 portobello mushrooms, sliced
3 cloves garlic, crushed
4 tablespoons mayonnaise
1 (1 pound) loaf focaccia bread

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Brush eggplant and red bell peppers with 1 tablespoon olive oil; use more if necessary, depending on sizes of vegetables. Place on a baking sheet and roast in preheated oven. Roast eggplant until tender, about 25 minutes; roast peppers until blackened. Remove from oven and set aside to cool.
  • Meanwhile, heat 1 tablespoon olive oil and cook and stir mushrooms until tender. Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.

I've never measured the ingredients when I've made this, so these are all approximations. Fresh bread and tomatoes are a must!

1/4 cup olive oil
1/2 cup red wine vinegar
1 red onion, sliced very thinly
1 can tuna
capers
sliced kalamata olive, to taste
1 fresh tomatoes, sliced 1/4-inch thick (or several cherry tomatoes)
leafy greens (romaine hearts or spinach work well)
fresh bread (I use italian, cut on the slant)

Steps:

  • Using a small bowl, mix olive oil and red wine vinegar together.
  • Place onions in mixture and let marinate while you prepare the rest of the ingredients.
  • When ready, set out bottom slice of bread, drizzle thinly with the oil-vinegar mixture, and layer onions.
  • Follow with capers and olives, tuna, tomato, leaf green, drizzled lightly with oil-vinegar mixture and top slice of bread.

2 Tbs. olive oil
2 garlic cloves, minced
1 medium onion, sliced
2 tbs. capers
1/4 cup pitted and coarsely chopped black olives
1 (14-oz. can) whole plum tomatoes with their juice, crushed by hand
2 Tbs. chopped fresh parsley
salt and pepper to taste

Steps:

  • Preheat grill. Brush both sides of each tuna steak with 2 teaspoons olive oil and season with salt and pepper. Place on the hot grill and cook for 2 minutes per side for rare. Saute onions and garlic in 2 tablespoon olive oil until soft and fragrant. Add tomatoes, olives, parsley and capers and simmer until tomato juice evaporates. Season to taste. Spoon sauce over tuna steaks.

Coarse salt
4 ounces haricots verts, stems trimmed
12 ounces cherry tomatoes, quartered
3 anchovy fillets, finely chopped
12 Kalamata olives, pitted and thinly sliced
1/4 cup thinly sliced fresh basil
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Freshly ground pepper
4 small yellowfin tuna steaks (about 2 1/2 pounds total)
Sliced crusty bread, for serving

Steps:

  • Cover potatoes with cold water in a medium saucepan; add salt. Bring to a boil; cook until potatoes are tender, 10 to 12 minutes. Drain, and rinse under cold running water. Cut potatoes into 1/4-inch-thick slices; transfer to a large bowl.
  • Prepare an ice-water bath; set aside. Bring a medium saucepan of water to a boil. Add haricots verts; cook until almost tender, 4 to 5 minutes. Plunge haricots verts into ice-water bath; let cool completely. Drain, and cut haricots verts in half. Add to bowl with potatoes.
