1 ½ teaspoons butter
4 cups chopped cooked chicken
1 cup sour cream
½ large onion, chopped
1 (10.75 ounce) can cream of chicken soup
½ cup milk
½ cup shredded Cheddar cheese
1 (10 ounce) package refrigerated biscuit dough
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with butter.
  • Mix cooked chicken, sour cream, onion, cream of chicken soup, and milk in a large bowl; pour into the prepared baking dish.
  • Bake in the preheated oven until hot, about 15 minutes.
  • Stir 1/2 cup Cheddar cheese into the mixture and arrange unbaked biscuits over top of casserole. Sprinkle remaining 1/2 cup Cheddar cheese over biscuits.
  • Return to oven and bake until biscuits are done in the middle and the chicken mixture is bubbling, 25 to 30 more minutes.

Easy to throw together. Adjust seasoning to taste (feel free to be generous as this is very mild as written). I got this from my father and use it as a basic guideline and throw in additional veg to use up whatever is in the fridge! Also works using a couple cans of chicken.

2 (15 ounce) cans Veg-All
1 (10 1/2 ounce) can condensed cream of chicken soup
1 onion
1 1/2 teaspoons butter
2 lbs chicken, chopped
1/2 cup mayonnaise
1 cup milk
1/2 cup sauteed red bell peppers or 1/2 cup chopped pimiento
1 1/2 cups shredded cheddar cheese, divided
1 (8 -12 ounce) can crescent rolls or 1 (8 -12 ounce) can biscuits
salt and pepper
1 teaspoon garlic powder

Steps:

  • Preheat the oven to 350.
  • Grease or line 11x7 inch baking dish or 10 inch quiche dish.
  • Chop onion.
  • Heat butter in small skillet and saute onion until tender.
  • Combine cooked onion, soup, chicken, milk, bell pepper and may in bowl then pour into baking dish.
  • Bake in oven 15 minutes.
  • Remove from oven and sprinkle 1 cup of cheese over mixture.
  • Unroll crescent rolls and place on vegetable mixture (or arrange biscuits in a single layer).
  • Sprinkle with remaining 1/2 cup cheese.
  • Return to oven and bake until biscuits are golden brown and sauce bubbles, usually about 20 minutes.
