8 slices center cut bacon (Reserve 3 Tbsp drippings) (cooked and crumbled or 8 slices to lay on top)
1/2 medium green pepper (finely diced)
1 medium sweet onion (finely diced)
1 lb lean ground beef
seasoned salt & black pepper
2 28 oz cans hickory flavored baked beans
2/3 cup barbecue sauce
1 10 oz can chili seasoned tomatoes (i.e. Rotel Chili Fixin's)
1/2 cup brown sugar
3 Tbsp whole grain mustard
2 Tbsp Worcestershire sauce
2 tsp barbecue seasoning (i.e. Grill Mates Smokehouse Maple or Barbecue Magic)

Steps:

  • Preheat the oven to 350°F.
  • In a 12-inch cast iron skillet or similar, saute the green pepper, onion and ground beef in reserved bacon drippings until no pink remains in the beef. Season with seasoned salt and black pepper to your taste. After browning, drain any excess fat from the pan.
  • To the skillet add beans, barbecue sauce, chili style tomatoes, brown sugar, Worcestershire sauce, whole grain mustard and barbecue seasoning. Stir until the ingredients are well blended. Add crumbled bacon.
  • Place into the oven and bake for 60-75 minuites.
  • Stir well, and allow the baked beans to rest for 5-10 minutes on the counter before serving to allow the sauce to thicken.

1 small yellow onion (finely chopped)
1 pound hot Italian sausage
1 red bell pepper (cored, seeded, and finely chopped)
1 yellow bell pepper (cored, seeded, and finely chopped)
1 can pork and beans (16 ounces)
1 can Bush's Original Baked Beans (24 ounces)
1 cup barbecue sauce
½ cup ketchup
1 Tbs whole grain or dijon mustard
2 Tbs spicy brown mustard
2 Tbs Worcestershire sauce
1 Tbs soy sauce
1 tsp chili powder
2 Tbs molasses
4 Tbs brown sugar
8 slices bacon (cooked until crispy)

Steps:

  • Preheat the oven to 350 degrees and spray a 9x13 baking dish with cooking spray.
  • In a large heavy bottom Dutch Ovenadd 1 Tbs olive oil, and the onions, after 3-5 minutes add in Italian sausage.
  • Brown the Italian sausage, and when half done, add in the bell peppers.
  • Cook until sausage is fully browned, and veggies are soft.
  • Drain meat mixture.

1 lb bacon
1 medium sweet onion (diced)
1 medium poblano or green bell pepper (seeded and diced)
1 medium red bell pepper (seeded and diced)
3 cloves garlic (minced)
3 15 oz cans navy beans ((drain two cans reserving liquid in third can))
1/2 cup dark molasses
1/2 cup ketchup
2 Tbsp yellow or whole grain mustard
1 Tbsp apple cider vinegar
1 tsp liquid smoke
1/3 cup packed light brown sugar
2 tsp pinto bean seasoning OR barbecue seasoning (i.e. Badia Pinto Beans seasoning)
1 tsp salt
1 tsp lemon pepper
chopped fresh chives for garnishing

Steps:

  • In a large skillet cook bacon over medium-high heat until crisp. (Reserve 6 slices uncooked for the top) Remove with a slotted spoon to paper towels to drain, leaving drippings in skillet. Crumble or cut into bite size pieces.
  • To the drippings add onion, poblano and red bell pepper. Cook over medium-high heat for 5 minutes or just until softened and beginning to brown. Add garlic, cook for 1 minute longer. Remove from heat.
  • To a large mixing bowl, add beans, ketchup, molasses, mustard, vinegar, liquid smoke, brown sugar, pinto bean seasoning, salt and lemon pepper. Add cooked vegetables and crumbled bacon. Mix until fully combined.
  • To bake: Preheat oven to 325°F. Spray a 3 quart baking dish or oven safe skillet with cooking spray. (Round or rectangular) Pour bean mixture into the dish. Top with reserved uncooked bacon slices.
  • Bake for 1 1/2 - 2 hours, until bubbly and reduced. Check at 1 hour and lay foil on top if needed, to prevent bacon from over browning.
