1 large onion, chopped
1-1/4 teaspoons chili powder
1 teaspoon dried oregano

1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup fresh or frozen corn
1/2 cup water
2/3 cup uncooked elbow macaroni
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large nonstick skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 5-7 minutes., Stir in seasonings, tomatoes, tomato sauce, corn and water; bring to a boil. 3 tablespoons chili powder
1 tablespoon ground cumin
1 pound ground beef (80 percent meat/20 percent fat)
1 teaspoon kosher salt
Freshly ground black pepper
2 cups marinara sauce (pick one with personality!)
One 8.5-ounce bag microwaveable pasta, such as rotini, elbows or penne
2 cups shredded Mexican cheese blend
2 jalapenos, thinly sliced into rounds
Greek yogurt or sour cream and sliced scallions, for garnish
