1 ½ cups diced onion
1 clove garlic, minced
1 (14.5 ounce) can no-salt-added diced tomatoes

MEXICAN GREEN CHILE STEW

Mexican Green Chile Stew image

This is my great grandfather, Reverend Philip Worth's recipe. He was a great pastor and served his congregation very well and very loyally at Beautiful Savior Lutheran Church in Chicago for many, many years. I have cooked this many times - but it always tasted better when my great gramps made it! It's easy to make, but the flavor would never make you think that!

Number Of Ingredients 13

3 tablespoons olive oil
1 ½ pounds beef chuck, cut into 1-inch cubes
1 ½ pounds pork shoulder, cut into 1-inch chunks
1 green bell pepper, seeded and chopped
1 clove garlic, minced
2 (14.4 ounce) cans whole peeled tomatoes
1 (7 ounce) can chopped green chilies
⅓ cup chopped fresh parsley

Tips:

  • Choose the right chiles: Poblano and Anaheim chiles are commonly used for this stew. Choose chiles that are firm and have a deep green color.
  • Roast the chiles properly: Roasting the chiles is an essential step that brings out their flavor and smokiness. Make sure to roast the chiles until the skin is charred and blistered.
  • Remove the seeds and veins: Once the chiles are roasted, carefully remove the seeds and veins. This will help reduce the spiciness of the stew.
  • Use fresh ingredients: Fresh ingredients will give your stew the best flavor. Use fresh tomatoes, onions, garlic, and cilantro.
  • Don't overcrowd the pot: When adding the ingredients to the pot, make sure not to overcrowd it. This will help the ingredients cook evenly.
  • Simmer the stew low and slow: Simmering the stew for a longer period of time will help the flavors to meld together and develop. Aim to simmer the stew for at least 1 hour, or longer if you have the time.
  • Serve with your favorite toppings: Mexican green chile stew is traditionally served with cornbread, tortillas, or rice. You can also add your favorite toppings, such as sour cream, avocado, or cheese.

Conclusion:

Mexican green chile stew is a delicious and versatile dish that can be enjoyed by people of all ages. With its smoky, flavorful broth and tender chunks of chicken or pork, this stew is sure to be a hit at your next gathering. So next time you're looking for a comforting and easy-to-make meal, give Mexican green chile stew a try. You won't be disappointed!
