1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.

2 pounds lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
4 (8 inch) flour tortillas
¾ cup fresh salsa
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
  • Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
  • Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
  • Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

2 tablespoons olive oil
1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib celery, finely chopped
1 clove garlic, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
Two 4-ounce cans diced roasted green chiles
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
2 large eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried breadcrumbs
2 tablespoons chopped fresh cilantro, for garnish, optional
2 tablespoons olive oil
2 cloves garlic, minced
1/4 medium white onion, minced
1 cup tomato puree
1/4 cup brown sugar
1 tablespoon yellow mustard
One 4-ounce can diced roasted green chiles
1 canned chipotle chile in adobo sauce, minced
Kosher salt

Steps:

  • For the meatloaf: Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery and garlic and cook, stirring often, until the vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl, combine the sauteed vegetables, ground beef, chorizo and green chiles.
  • In a medium bowl, combine the salt, cumin, black pepper, cayenne and eggs. Add the ketchup and sour cream. Mix well with a fork, then pour it on top of the meat mixture. Sprinkle with the breadcrumbs and mix thoroughly with clean hands.
  • Put the mixture into a loaf pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • For the salsa-glaze: Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until softened, 3 to 4 minutes. Stir in the tomato puree, sugar, mustard, green chiles and chipotle chile. Bring the mixture to a simmer over medium-low heat. Cook until slightly thickened, 5 to 6 minutes. Season with salt to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf, garnish with fresh cilantro if desired and serve.

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium pan over medium-high heat. Add the onion and sauté for 4-5 minutes, until softened and starting to brown. Add the garlic and sauté for another minute, until fragrant. Remove the pan from the heat.

Steps:

1 lb lean ground beef
1/4 cup instant minced onion or 1 medium onion, diced small
1 cup Italian seasoned breadcrumbs
1 egg, beaten
1/2 teaspoon italian seasoning
3 tablespoons ketchup
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can Ro-Tel tomatoes
salt & freshly ground black pepper, to your liking (optional)
8 ounces sargento's shredded four-cheese Mexican blend cheese, I use reduced fat

Steps:

  • Mix the hamburger, minced onions, bread crumbs, beaten egg, and Italian Seasoning together well with your hands.
  • Add in the ketchup, 1/2 the can of tomato sauce, and 1/2 the can of Ro-tel tomatoes. Mix well.
  • Put 1/2 the mixture into an oven-proof baking pan (I used a teflon pan), making a square or a circle, whichever you prefer.
  • Cover the top of the meat mixture with a generous amount of cheese, not coming quite to the edge.
  • Top the cheese with the rest of the hamburger mix, and pat down to make a loaf. Press the sides together a little so the cheese won't drip out when cooking.
  • Mix the tomato sauce and Ro-tel tomatoes together and spread on top of the meatloaf.
  • Bake in a 350 oven, for about 30 minutes before taking it out, to drain off the juices in the pan. (I set the juices aside to put in my Mexican Rice, as part of the water to make the rice).
  • Put back in oven for 30 more minutes then take out, and cover to top of the meatloaf with the rest of the cheese.
  • Put back in the oven, and watch carefully for the cheese to melt on top.
  • Remove, cut, and serve.

  • 1. In a large bowl, whisk together the first 6 ingredients (except doritos, hamburger and the EXTRA cheese and salsa). Add hamburger. Mix well. Add doritos until it has the consistency of regular meatloaf. ( you may add more or less doritos as desired texture) Place meatloaf mixture in a baking dish. Bake at 350 degrees for an hour or so until done. Add the extra salsa and then the cheese on top. Return to the oven just until the cheese melts.   • Preheat oven to 375 degrees F (190 degrees C).

1/2 c onion, diced
1 large poblano, diced
1 diced tomatoes
1 jalapeno, diced
1 tsp ea. cumin, ancho chili pwd, gran. garlic, and black pepper
1/4 c cilantro, fresh, diced
2 hot links, diced
1 c frozen corn, thawed
2 eggs
3 c colby or cheddar cheese, grated

Steps:

  • 1. Remove seeds and chop poblano and jalapeno. Also chop onion, tomatoes, and cilantro. In a large bowl mix together ALL ingredients and 1 c of cheese.
  • 2. On foil, pat out meat into rectangular shape, about 1 1/2 thick. Place 2 c of cheese (reserving remainder for top).
  • 3. Use foil as a guide and beginroll meat up and over cheese. Seal ends of meat well and pat into a rectangle square with a flat top. Using foil, lift meat roll into baking dish, place seam side down. Cover snuggly, bake 350 degrees for 1 hr, uncover, top with cheese and cook 30 min more.

1/4 c plain breadcrumbs, dried
1 large egg, well beaten
1 c salsa, we use hot picante brand
4 1/2 oz chopped green chiles
2 Tbsp brown sugar, packed
1 Tbsp chopped fresh cilantro
1 Tbsp chopped parsley, or additional cilantro
1 tsp cocoa powder
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp cumin
1/4 tsp cinnamon
1/4 tsp chili powder
1 tsp lemon juice

Steps:

  • 1. Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.
  • 2. In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.
  • 3. Bake at 350 for 50 minutes. Remove from oven and spoon remaining sauce over top of meatloaf. Return to oven and bake an additional 20-30 minutes or until thoroughly cooked and center reads 160 degrees on an instant-read thermometer.

1 egg, lightly beaten
1 med. onion, finely chopped
1/4 c bottled salsa
2 Tbsp chili powder
3 minced garlic gloves
1/2 tsp salt
1 pound ground beef
1 8 1/2 ounce package corn muffin mix
1 ounces sharp cheddar cheese, sliced or grated
bottled salsa (optional)

Steps:

  • 1. Preheat oven to 350 F.
  • 2. In a large mixing bowl combine egg, onion, 1/4 cup salsa, the chili powder, garlic, and salt; add ground beef and mix well.
  • 3. Shape into a ball and place in a 9-inch pie plate. Flatten meat mixture to a 6-inch circle; set aside.
  • 4. Prepare corn muffin mix according to package directions. Spread corn muffin batter over meat mixture in pie plate. Bake about 50 minutes or until an instant-read thermometer inserted into the meat loaf registers 160F. Remove from oven.
  • 5. Halve cheese slices and arrange on top of the corn muffin mixture. Cover loosely and let stand 10 minutes before serving. If desired, serve with additional salsa. Makes 6 servings.

1 cup finely crushed tortilla chips or corn chips
1 envelope onion soup mix (1/2 of a 2-oz. pkg.)
3/4 cup bottled taco sauce
2 eggs, lightly beaten (divided)
1 8.8-oz. pouch cooked Spanish-style rice (such as Uncle Ben's Ready Rice)
1 cup of frozen yellow corn
1 can of black beans
1 14.5-oz. can diced tomatoes and green chiles, drained
1 cup shredded pepper jack cheese (4 oz.)
1 medium fresh Anaheim pepper, seeded and chopped (1/2 cup)
1 Jalapeño pepper, no seeds, chopped
1/4 cup chopped fresh cilantro
Extra Tortilla or corn chips, sliced jalapeño pepper*, and/or fresh cilantro sprigs for top decor if desired.

Steps:

  • 1. Preheat oven to 350 degrees F. Combine beef, crushed chips, soup mix, 1/2 cup of the taco sauce, one lightly beaten egg, and 1/2 tsp. black pepper, 1 tsp. garlic powder, 1 chopped jalapeño. Press mixture into the bottom and up the sides of a 10-inch deep-dish pie plate. 2. Heat rice according to package directions. In a large bowl combine rice, corn, black beans, tomatoes, cheese, Anaheim pepper, cilantro, remaining 1/4 cup taco sauce, and remaining egg. Spoon mixture into meat shell. Place pie plate on a baking sheet. Cover loosely with foil. 3. Bake for 40 minutes. Remove foil and bake 20 minutes more or until an instant-read thermometer registers 160 degrees F. Let cool 15 minutes. Top with chips, jalapeño, and cilantro. Makes 6 servings with room for a little leftovers. *When working with hot chile peppers, wear plastic gloves or wash hands well after cutting, because the peppers contain oil that may burn skin and eyes. A helpful tool is to wash hands with a little toothpaste, then with soap.

1 c fritos corn chips coarsely crushed
1 1/2 c mild salsa
1 c mexican blend shredded cheese
1 1/2 lb ground round
1 pkg taco seasoning mix
1 large egg, beaten

Steps:

  • 1. preheat oven 375 degrees F. Mix all ingredients, except cheese, together in a large mixing bowl. place mixture in a Pyrex baking dish.
  • 2. Bake covered in a preheated oven for 1 hour 10 mins. Uncover and sprinkle cheese on top. place back in oven for and additional 10 mins or until cheese is melted.
  • 3. slice and serve as a meatloaf or servce with nacho chips, flour tortillas and top with you favorite Mexican condiments
  • 4. We like to put salsa, cheese and pico de gallo sauce on ours and wrap them in flour tortillas and eat them like a taco
