1 pound frozen shrimp, thawed and peeled
¼ cup olive oil
1 tablespoon minced garlic
2 teaspoons lemon juice
¼ teaspoon pepper
1 pinch finely chopped parsley

Steps:

  • Rinse and dry shrimp.
  • Whisk olive oil, garlic, lemon juice, pepper, and parsley together in a bowl and pour into a large resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.

3 cloves garlic, thinly sliced
1 tablespoon chopped fresh oregano
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper, to taste
16 large shrimp, peeled, and deveined
1 summer squash, seeded and cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1 zucchini, seeded and cut into 1-inch pieces

Steps:

125 ml olive oil
6 table spoons of lime juice about 2 limes
2 garlic cloves finely chopped
1/2 teaspoon of granulated sugar
1/2 a teaspoon of chili powder
leaves from a small coriander bunch finely chopped
1 tablespoon of soy sauce
1 cm of fresh root ginger peeled and finely chopped
salt and pepper
32 large raw prawns total around 750 g

Steps:

  • 1. whisk together the oil lime juice ginger and garlic. Add the sugar chilli powder chopped coriander,soy sauce, salt and pepper. Stir well.
  • 2.take 8 bamboo skewers, thread 4 prawns on each and lay them in a dish.
  • 3. pour the marinade over the prawns, cover and put in fridge for 1 to 2 hours, turning occasionally.
  • 4. heat the grill and brush the rack with oil. Put the kebabs on the rack and grill them for 2-3 minutes until they turn pink. Turn them and do the same for the other side.
  • 5. put the kebabs on a plate and serve with lime wedges on the side and last squeeze of lime on the top.

1 kg medium raw prawns, peeled and roughly chopped
1 medium red onion, finely chopped
1/4 cup fresh coriander, chopped
1 large tomatoes, finely chopped
1 garlic clove, minced
1/2 teaspoon minced ginger
1/2 teaspoon ground red chili pepper
75 g besan flour (chick pea flour)
1/8 teaspoon bicarbonate of soda
salt
2 cups vegetable oil (for deep frying)

  • Pulse prawns in food processor-they need to just come together not turn into a paste!
  • Combine the prawns and remaining ingredients except the oil.
  • Using a tablespoon, measure out approximately 30 balls.
