2 teaspoons vegetable oil, or as needed
1 (15.25 ounce) can whole kernel corn, drained
1 (4.5 ounce) can sliced mushrooms, drained
1 cup diced green bell pepper
½ cup mild salsa
½ large tomato, diced
3 tablespoons mild nacho cheese sauce
1 pound ground beef
¼ cup mild taco sauce
1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. 1 lb lean ground beef
1 onion, chopped
1 red pepper, chopped
1 orange pepper, chopped
1 yellow pepper chopped
1 package Taco Seasoning
1 jar queso (394 ml)
3/4 of a 1 kg package of frozen Tater Tots
1 cup cheddar cheese, shredded

Steps:

  • Heat a large skillet over medium heat. Add onions, peppers and ground beef. Cook until beef is no longer pink and onions and peppers are softened, about 7 to 8 minutes. Stir in taco seasoning.
  • Preheat oven to 400F. Grease a large casserole dish with cooking spray. Spread the beef mixture on the bottom evenly. Pour queso on top and spread to cover beef mixture. Cover with Tater Tots. 1 cup diced red bell pepper (1 large)
1 cup diced onion
1 package (1 oz) Old El Paso™ taco seasoning mix
1/4 cup water
1/4 cup milk
1 egg
2 cups shredded 4-cheese Mexican cheese blend (8 oz)
4 cups frozen Tater Tots™ potatoes (from 32-oz bag)
Fresh toppings: diced tomatoes, guacamole, sour cream, cilantro

Steps:

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
  • In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. 1 (16 ounce) package frozen tater tots
1 (12 fluid ounce) can enchilada sauce
