Michael's Best Button Mushrooms image

I saw this on Foodtv yesterday and I can't wait to try it. Mushrooms are glazed with a garlic white wine lemon sauce with a little thyme added. Small white button mushrooms were used and left whole for a beautiful presentation. Great for a dinner party. Recipe courtesy of Michael Chiarello.

HONGOS EN ESCABECHE; MUSHROOMS SAUTEED WITH VINEGAR

Hongos En Escabeche; Mushrooms Sauteed With Vinegar image

From herbivoracious.com . There is a nice contrast between the browned, flavorful crust and the juicy interior. Use small button or cremini mushrooms, or cut larger ones into halves or quarters. These mildly-vinegared mushrooms are versatile and easy. If you serve them with a Mexican meal garnish them with cilantro, but you could just as easily use parsley and include them on a Spanish tapas spread. Change to a red wine vinegar or (a smaller amount) of aged balsamic for an Italian meal.

Tips:

  • Choose the Freshest Mushrooms: Select button mushrooms that are firm and have a closed veil. Avoid any mushrooms with blemishes or bruises.
  • Clean the Mushrooms Properly: Use a soft brush or a damp cloth to gently wipe away any dirt or debris from the mushrooms. Avoid washing them under running water, as this can make them soggy.
  • Use a Variety of Cooking Methods: Button mushrooms can be cooked in a variety of ways, including sautéing, grilling, roasting, and stir-frying. Experiment with different methods to find your favorite way to enjoy them.
  • Season Generously: Button mushrooms have a mild flavor, so they benefit from generous seasoning. Use a combination of salt, pepper, garlic powder, and other herbs and spices to enhance their taste.
  • Don't Overcook the Mushrooms: Button mushrooms cook quickly, so be careful not to overcook them. Overcooked mushrooms will become rubbery and lose their flavor.

Conclusion:

Button mushrooms are a versatile and delicious ingredient that can be used in a variety of dishes. With their mild flavor and meaty texture, they are a great addition to everything from soups and stews to stir-fries and salads. Whether you are a seasoned chef or a beginner in the kitchen, button mushrooms are a great ingredient to have on hand. Experiment with different cooking methods and recipes to find your favorite ways to enjoy them.
