2 tablespoons chopped onion
2 cups shredded cheddar cheese, divided
1 can (10 ounces) enchilada sauce, divided
1 tablespoon canned chopped green chilies
6 corn tortillas (6 inches), warmed
Shredded lettuce and sour cream, optional

Steps:

  • Crumble beef into a 2-qt. microwave-safe dish; add onion. Microwave, covered, on high until beef is no longer pink, 2-3 minutes; drain. 8 flour tortillas (soft taco size)
1 lb ground beef
1 (16 ounce) jar salsa or 1 (16 ounce) jar picante sauce
2 tablespoons chili powder
1 (10 ounce) can cheddar cheese soup
2 cups shredded colby-monterey jack cheese
sour cream (to garnish)
chopped tomato (to garnish)

Steps:

  • Cook beef until browned; add salsa and chili powder.
  • Place 4 tortillas in a 2 quart baking dish and top with half of the meat mixture. Add half of the soup. Repeat layers and top with cheese.

1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
8 nine inch flour tortillas
1 (15 ounce) can tomato sauce
1/3 cup water
1/3 cup chopped green pepper
1 garlic clove, minced
1 1/2-2 teaspoons chili powder
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin

Steps:

  • Crumble ground beef into 2 quart casserole; add onion. Cover loosley and microwave on high 3 min.; stir.
  • Cover and microwave until meat is firm, 2-3mins. Stir to break up meat; drain.
  • Stir in cheese, sour cream, parsley, salt and pepper. Cover and reserve.
  • Wrap 4 tortillas in damp cloth and microwave on high until softened, about 45 sec. Keep tortillas covered while working with the filling.
