Time 35m

Yield 6 pieces, 4-6 serving(s)

Number Of Ingredients 9

1 lb thinly sliced top round steaks (1/4 inch thick) or 1 lb rib eye (1/4 inch thick)
15 -20 saltine crackers, finely crushed
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 cup flour
1 -2 egg (add a touch of milk for egg wash)
salt
pepper
olive oil (for frying, or whatever kind of oil you like to use to fry.)

Steps:

  • Heat Oil.
  • Salt and Pepper flour on one plate.
  • Make Egg Wash.
  • Crush Saltines, I use a food processor, adding in garlic powder, onion powder and pepper. Put crumbs on another plate. (No need to add salt as the saltines are salty enough.).
  • I usually cut the steaks in half to fit in the frying pan, but you can leave them in one big piece if the steaks will fit in yours.
  • Dip steak in flour, then egg then cover with saltine crumbs.
  • Fry in oil for about 3-5 minutes on each side until nicely browned. It won't take long because the steaks are so thin.
  • Drain on Paper Towels.
  • OPTIONAL: Serve with Avocado, Pico de Gallo, Salad, Rice and/or Beans and sprinkle steaks with lemon juice.

Time 30m

Yield 4

Number Of Ingredients 8

2 eggs
kosher salt to taste
ground black pepper to taste
¾ cup all-purpose flour
1 cup Italian seasoned bread crumbs
2 skinless, boneless chicken breast halves, thinly sliced
¼ cup vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Beat eggs with salt and pepper in a shallow dish. Spread flour in another dish and bread crumbs in a third dish.
  • Working with one piece at a time, gently press chicken into the flour to coat and shake off the excess flour. Dip into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded chicken onto a plate while breading the rest; do not stack.
  • Heat vegetable oil in a large skillet over medium heat. Pan-fry chicken in batches of 2 or 3 pieces until golden brown and no longer pink in the center, about 2 to 4 minutes per side. Transfer cooked chicken to a baking sheet and keep warm in preheated oven while cooking remaining chicken.

Milanesa Cuban vs. Schnitzel: What's the Difference?

Milanesa and Schnitzel are two similar yet distinct cutlets that share a common ancestor but have developed their own unique characteristics over time. While both dish utilize a thin, pounded cutlet, the preparation, seasoning, and cooking methods vary, resulting in different taste and texture experiences.

Milanese vs. Schnitzel: A Culinary Journey

  • Preparation: For both dish, the foundation lies in thinly pounded cutlets, creating a larger surface area for even cooking and better seasoning penetration.
  • Tenderizing: While Schnitzel emphasizes the use of a mallet to achieve the desired thinness, Cuban also employs this technique but additionally incorporates a technique called "ablandamiento." This entails using a sharp object like a skewer to perforate the meat, facilitating easier pounding and enhancing seasoning.
  • Coating and Seasoning: The breading and seasoning play a pivotal role in shaping the final flavors.
    • Milanese: Utilizes a combination of bread crumbs and Parmesan cheese as the primary breading. Seasoning typically includes a fragrant mix of oregano, thyme, basil, or parsley. Garlic powder and/or cumin often make an appearance, and a splash of white wine adds a touch of acidity.
    • Schnitzel: Typically coated in a simple bread crumb mixture and then seasoned with paprika. The result is a more peppery and straightforward taste profile.
  • Cooking Method: Both dish are typically pan-friend, allowing for a crispy golden-browed outside while preserving the meat's tenderness. Schnitzel, however, often takes the extra step of predinnering the cutlets in egg and bread crumbs.

Conclusion

Milanesa Cuban and Schnitzel, despite their shared culinary lineage, each offer a distinctive taste and texture experience. While Schnitzel's distinct peppery notes and simple preparation make it a classic, the Cuban take on the cutlet, with its unique combination of herbs, spices, and the "ablandamiento" technique, adds a layer of depth and interest. Both dish are worth trying at home or savoring at an eatery, presenting a delightful culinary journey.
