My dad has been a wheat farmer all his life and my state is the wheat capital, so this recipe represents my region and my family well. This bread never lasts too long at our house. -Kathy McCreary, Goddard, Kansas

Number Of Ingredients 6

2 packages (1/4 ounce each) active dry yeast
2-1/2 cups warm whole milk (110° to 115°)
1/3 cup honey
1/4 cup butter, melted
2 teaspoons salt
8 to 8-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add honey, butter, salt and 5 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured board; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and shape into 2 loaves. Place in greased 9x5-in. loaf pans. You can serve the cake plain, with dollops of the whipped cream on the side, for a casual gathering, or frost and fill it, adding berries or other fruit, for a more celebratory affair. It makes an excellent birthday cake.

12 tablespoons/170 grams unsalted butter (1 1/2 sticks), at room temperature, plus more for greasing
2 1/4 cups/290 grams all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
3 large eggs, at room temperature
1 cup/240 milliliters buttermilk (shake carton before measuring)
3/4 cup/180 milliliters honey, plus more for whipped cream and serving
1/2 teaspoon vanilla extract
3/4 cup/150 grams granulated sugar
1 cup/240 milliliters heavy cream
Fresh berries, for serving (optional)

Steps:

  • Heat oven to 350 degrees. Grease two 8-inch round cake pans, line the bottoms with parchment paper and grease the parchment.
  • Sift flour, baking powder, baking soda and salt into a large bowl.
  • In a small bowl, beat eggs until smooth.
  • In a medium bowl, stir together buttermilk, honey and vanilla.
  • Using an electric mixer fitted with the paddle attachment, beat butter on medium speed to break it up, then gradually beat in sugar, continuing to beat until very light and fluffy, 2 to 3 minutes.
  • With the mixer on medium speed, add eggs, 1 tablespoon at a time. If the mixture looks curdled at any point, add 1 tablespoon of the flour mixture to bind it back together.
  • Reduce mixer to low and mix in a third of the flour mixture. Scrape down sides of bowl with a rubber spatula, then mix in half the buttermilk mixture. Mix in another third of the flour mixture, scraping down sides of bowl, then mix in remaining buttermilk mixture followed by remaining flour. Scrape down bowl.
  • Scrape batter evenly into prepared pans and smooth tops with a spatula. Bake until the cake springs back when lightly pressed, and a toothpick inserted into center of the cake comes out clean, 30 to 40 minutes.
  • Transfer to a wire rack to cool for 10 minutes. Run an offset spatula or butter knife around edges of pan to loosen cakes, then unmold onto the rack, remove parchment and allow to cool completely.
  • Just before serving, whip the cream with a drizzle or two of honey, to taste (up to 2 tablespoons if you like it sweet). Frost the top of one cake, top with the remaining cake then frost the top of the stacked cake. Drizzle with additional honey and garnish with berries, if you like.

Wow - this is delicious bread! I'm always trying new bread recipes and am glad I ran across this one in a recent magazine! It is delicious! Enjoy! This makes two loaves. Updated 2/10/05 - I just wanted to update that I halved this recipe and did the dough in the dough cycle and it turned out wonderfully. I did use a full package of yeast instead of halving that. I took the dough out of the ABM and let it rise one more time in the loaf pan. Then I baked it at 375 degrees for 35 minutes.

½ cup honey
3 cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
½ cup butter, melted
1 cup rye flour
3 cups whole wheat flour
5 cups unbleached all-purpose flour

  • In a large bowl, dissolve yeast in warm water. Allow yeast to sit until it begins to form bubbles.
  • Add honey, butter, and salt to the yeast mixture. Stir in flours one cup at a time, beginning with the rye. When the dough begins to stiffen, turn it out on to a well floured surface. Knead for 5 minutes, adding flour as needed. Place into a greased bowl, and turn once to oil the surface of the dough. Cover with a damp cloth. A quick bread, not a yeast bread, another of my longtime favorites adapted from my old Vegetarian Epicure cookbook. Unbelievably delicious spread with butter & honey--also good with cream cheese.

Number Of Ingredients 10

1 cup milk
2/3 cup honey
1/4 cup butter
2 eggs
1 1/2 cups white flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup toasted wheat germ
1 cup walnut halves (optional) or 1 cup walnuts, chunks (optional)

Steps:

  • Heat milk and honey together until honey is dissolved, then stir in the butter.
  • When the milk-butter mixture is somewhat cooled, beat in the eggs.
  • Sift together the flour through salt; add wheat germ.
  • Gradually stir the dry mixture into the liquid.
  • Stir in nuts (if desired).
  • Turn into 9 X 5-inch loaf pan.
