1 1/2 cups cooked millet, room temperature
1 tablespoon finely minced shallot
1 clove minced garlic
1/2 cup peeled and finely grated carrot, loosely packed
1/4 cup finely grated zucchini
1 tablespoon chopped parsley
1 teaspoon chopped thyme
1 tablespoon extra-virgin olive oil
1 large egg, lightly whisked
1 1/2 teaspoons coarse salt
1/4 teaspoon ground pepper
2 tablespoons canola oil, plus more for cooking
4 whole-grain hamburger buns, toasted
Green leaf lettuce
Tomato slices
1/2 cup Greek yogurt

Steps:

  • In a large bowl, combine millet, shallot, garlic, carrot, zucchini, parsley, thyme, and olive oil and mix well. Add egg and mix until fully incorporated; season with salt and pepper.

2 large shallots, minced
3 tablespoons olive oil
2 medium carrots
2 stalks celery
4 cloves garlic
4 cups water
4 cups vegetable broth
2 tablespoons apple cider vinegar
½ teaspoon paprika
¼ teaspoon ground coriander
¼ teaspoon salt
¼ teaspoon ground cumin
¼ teaspoon dried thyme
¼ teaspoon dried marjoram
1 cup millet
1 cup brown rice
1 cup dried green peas
1 cup dried lentils

Steps:

  • Combine mushrooms, shallots, and olive oil in a stockpot over low heat. Cook until mushrooms release their moisture and it evaporates almost completely, 7 to 10 minutes. Remove mixture from the pot and let cool.

1 -2 teaspoon sesame oil
3 -4 slices fresh ginger, cut into thin matchsticks
1 cup millet, rinsed and drained
3 cups boiling water
sea salt
1/2 cup diced carrot
1/2 cup onion
1/2 cup celery
fresh parsley, minced (one handful)
1/2 cup cornmeal

Steps:

  • Heat a small amount of sesame oil in a saucepan and saute the ginger for 2-3 minutes with a sprinkling of salt.
  • Add the millet and saute until well-coated with oil and it gives off a nutty fragrance.
  • Add boiling water, season lightly with salt and reduce heat to low.
