2 teaspoons sugar
2 tablespoons olive oil
1/4 cup water
1 tablespoon balsamic vinegar
3/4 teaspoon salt, divided
1 lb ground beef
1/4 cup chopped parsley
2 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1/4 teaspoon fresh ground pepper
4 hamburger buns, toasted
4 slices tomatoes
lettuce leaf

Steps:

  • Cook onions and sugar in hot oil over low heat 20 to 25 minutes until onion is caramelized, stirring often. Stir in the 1/4 cup water, vinegar, and 1/4 teaspoon of the salt. Set aside and keep warm.
  • Combine beef, parsley, tomato paste, Worcestershire sauce, 1/2 teaspoon salt, and pepper. Shape into 4 patties.

2 tablespoons extra-virgin olive oil
3 medium onions, thinly sliced
1/4 cup red wine
4 sprigs thyme
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 small onion, preferably Vidalia, finely chopped
1 pound ground beef
1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
1.5 oz. Comte cheese, thinly sliced, cut into 1 1/2-inch squares
3 red tomatoes, such as Campari, sliced 1/4-inch thick
8 three-inch mini brioche buns, split in half

Steps:

  • Make the onions: Heat oil in a medium skillet over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 8 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until nicely browned and caramelized, about 30 minutes more.
  • Add wine, thyme, and 1/4 cup water. Raise heat to medium-high and cook, stirring occasionally, until the liquid has evaporated, about 3 minutes. Season with salt and pepper.
  • Make the burgers: heat oil in a small skillet over medium-high heat. Add onion and cook, stirring occasionally, until translucent, about 2 minutes. Remove from heat and let cool completely.

1/2 cup mayonnaise
2 tablespoons chopped drained sun-dried tomatoes packed in oil
2 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh parsley and/or basil

4 plum tomatoes, halved
2 tablespoons extra-virgin olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
For the caramelized onions:
4 tablespoons unsalted butter
3 large onions, thinly sliced
Pinch of sugar
Vegetable oil, for the grill
1 pound ground beef chuck
1 mild Italian sausage link, casing removed

4 slices provolone cheese
4 brioche or hamburger buns, split

Steps:

  • Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
  • Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
  • Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
  • Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. 1 1/2 pounds ground beef chuck

1 large sweet onion, sliced
1 pound ground chicken
½ cup panko bread crumbs, or to taste
6 slices deli ham, or more to taste, diced
1 large egg
½ green bell pepper, diced
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
4 slices Swiss cheese
2 tablespoons salted butter, softened
4 whole wheat hamburger buns
4 tablespoons hot, sweet mustard (such as Inglehoffer®)
