NO-BAKE BLUEBERRY CHEESECAKE MINI TARTS

No-Bake Blueberry Cheesecake Mini Tarts image

These two-bite tarts (three if you're daintier than I) are ideal for entertaining - they're perfect finger food, they look great, and they take - I'm not kidding - not even 10 minutes to make. Taste-wise, the filling is just right. Sour cream, cream cheese, whipping cream, lemon zest, brown sugar, and a little vanilla. It's the perfect base for those beautiful bursts of blueberries.

Provided by Karen..

Categories     Cheesecake

Time 20m

Yield 45 tarts

Number Of Ingredients 5

45 prebaked frozen miniature phyllo tart shells (like Athens Mini Fillo Shells)
1 (15 ounce) can pumpkin
2 cups frozen whipped topping, thawed (plus extra for garnish)
1 teaspoon pumpkin pie spice (plus extra for garnish)
1 (3 1/2 ounce) package cheesecake flavor instant pudding and pie filling mix

Steps:

  • Remove the shells from the freezer and let them thaw at room temperature for 15 minutes.
  • Meanwhile, combine the pumpkin, whipped topping, and pumpkin pie spice in a medium bowl, whisking until smooth. Add the pudding mix and whisk until smooth and thick.
  • Spoon about 1 tablespoon of the filling into each of the shells (you can also pipe the filling with a pastry bag or a plastic sandwich bag with one corner snipped off), then top the tarts with whipped topping and a sprinkling of the pumpkin pie spice, if you like.

Tips:

  • Use good quality cream cheese: This is the main ingredient in the cheesecake, so make sure it's fresh and full-fat.
  • Make sure the cream cheese is at room temperature: This will help it mix smoothly with the other ingredients.
  • Don't overbeat the mixture: Overbeating can make the cheesecake dense and dry.
  • Bake the cheesecake in a water bath: This will help prevent the cheesecake from cracking.
  • Chill the cheesecake for at least 4 hours before serving: This will help the cheesecake set properly.
  • Top the cheesecake with your favorite toppings: Some popular options include fresh berries, chocolate chips, or caramel sauce.
