Tips:

  • Use fresh corn kernels: Fresh corn kernels give the muffins a sweet and juicy flavor. If you're using frozen corn kernels, thaw them completely before using.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
  • Preheat the muffin tins: Preheat the muffin tins before filling them with batter. This will help the muffins rise evenly.
  • Fill the muffin cups only 2/3 full: The muffins will rise as they bake, so don't fill the muffin cups all the way to the top.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will usually take about 20-25 minutes.
  • Let the muffins cool in the muffin tins for a few minutes before transferring them to a wire rack: This will help the muffins hold their shape.

Conclusion:

Mini corn muffins are a delicious and versatile snack or side dish. They can be served with butter, honey, or your favorite jam. They can also be used as a base for mini sandwiches or topped with chili or soup. With so many possible variations, mini corn muffins are a great way to use up leftover corn and add a touch of sweetness to your next meal.
