½ cup sour cream
⅓ cup sugar
1 teaspoon vanilla
2 eggs
2 tablespoons molasses
½ teaspoon ground ginger

18 cupcake liners

Steps:

  • Preheat oven to 300˚F (150˚C).
  • Place gingersnaps in bottom of each liner, then set aside.
  • Beat cream cheese, sugar, and vanilla until fluffy.

16 chocolate sandwich cookies
½ stick unsalted butter, melted
2 packages cream cheese, softened
¾ cup sugar
2 large eggs
2 teaspoons vanilla extract
1 cup Butterfinger® Bits
whipped topping, for garnish

Steps:

  • Preheat the oven to 350°F (180°C). Line 2 24-count mini muffin tins with paper liners. (Alternatively, use a standard 12-count muffin tin.)
  • Add the chocolate sandwich cookies to a food processor and pulse until finely chopped. Add the melted butter and pulse until combined.

2 cups gingerbread cookie crumbs
¼ cup unsalted butter, melted
3 (8 ounce) packages cream cheese, at room temperature
1 cup dark brown sugar
⅓ cup unsulphured molasses
1 tablespoon lemon juice
1 tablespoon vanilla extract
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
¼ teaspoon ground allspice
1 pinch salt
3 eggs, room temperature
1 cup heavy whipping cream
¼ cup confectioners' sugar, or to taste
½ teaspoon vanilla extract
½ teaspoon cinnamon, or to taste
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan. Wrap the outside of the springform pan 3 to 4 times with aluminum foil.
