MINI SHRIMP COCKTAIL APPETIZERS

Mini Shrimp Cocktail Appetizers image

From Kraftfoods(dot)com website. I made these for a party and I've had so many people request the recipe. Kraft calls for using finely chopped onions but I skipped that just to make it an even faster appetizer to get on the table.

Time 10m

Yield 16 appetizers, 8 serving(s)

Number Of Ingredients 5

16 crackers (I have used Ritz & Cobblestone Wheat Crackers)
1/3 cup whipped cream cheese spread
1/3 cup seafood cocktail sauce
16 large fresh shrimp, cooked (or pre-cooked frozen shrimp that has been thawed)
1/3 cup finely chopped green onion (optional)

Steps:

  • Spread each cracker with 1 tsp of the cream cheese spread.
  • Top evenly with the cocktail sauce and one shrimp.
  • Sprinkle some of the finely chopped onions on top (if you desire).

Tips:

  • Choose the right shrimp: For the best results, use large, firm shrimp that are peeled and deveined.
  • Cook the shrimp properly: Overcooked shrimp are tough and rubbery, so be careful not to overcook them. Cook the shrimp until they are just opaque and pink, about 2-3 minutes per side.
  • Make the cocktail sauce ahead of time: The cocktail sauce can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for parties or gatherings.
  • Assemble the appetizers just before serving: The shrimp cocktails are best served fresh, so assemble them just before serving.
  • Get creative with your garnishes: You can use a variety of garnishes to add color and flavor to your shrimp cocktails, such as lemon wedges, cocktail onions, or fresh herbs.

Conclusion:

Mini shrimp cocktail appetizers are a delicious and easy-to-make appetizer that is perfect for any occasion. With just a few simple ingredients, you can create a party-pleasing appetizer that will be enjoyed by everyone. So next time you are looking for a quick and easy appetizer, give these mini shrimp cocktail appetizers a try.
