1 cup water
1 cup white sugar
12 fresh mint leaves, or more to taste
⅛ lime
12 fresh mint leaves, or more to taste
⅛ fresh mango, peeled and cubed, or more to taste
1 ½ fluid ounces coconut-flavored rum, or more to taste
ice
club soda, or as needed

Steps:

  • Combine water and sugar in a small pot over medium heat. Whisk until sugar dissolves in the water. Add 12 mint leaves. Bring to a boil and whisk for 1 minute. Remove from heat and let cool, about 30 minutes.
  • Place lime and 12 mint leaves in a glass; mash together with a muddler to extract flavors. Add fresh mango; muddle until combined. Stir in 2 tablespoons of the mint simple syrup. Stir in coconut rum. Fill glass with ice and top with club soda. Stir 1 more time to distribute flavors.

2 ounces* mango nectar
2 ounces white rum
1 ounce lime juice
1/2 ounce simple syrup
2 to 4 ounces soda water
Ice, for serving (try clear ice!)

Steps:

  • In a cocktail shaker, muddle the mint leaves. Add the mango nectar, rum, lime juice and simple syrup and fill the cocktail shaker with ice. Shake until cold.
  • Strain the drink into an ice-filled glass. Top off the glass with soda water. If desired, garnish with more mint and a lime wheel.
