MISO CHICKEN SANDWICHES WITH GINGER MAYONNAISE

Miso Chicken Sandwiches with Ginger Mayonnaise image

This is one of my favorite new things to make. It is amazingly easy to put together, the chicken cooks quickly, and the resulting sandwich is fabulous! It's faster than take-out. When I first made these, I thought the chicken tasted a bit salty on it's own. But once it's all together in the sandwich, the flavors blend perfectly, and it wasn't salty at all. I did use low sodium soy sauce, by the way. It's one of those things that make you want to go back for more, even though you're already full, lol. From the Food Network Kitchens Cookbook...they use multigrain sandwich bread, we used nice crusty rolls.

KARAAGE CHICKEN SANDWICH

Karaage Chicken Sandwich image

Karaage is a Japanese cooking technique similar to deep frying . I used it to create a delicious fried chicken sandwich. I also added some miso mayonnaise and an Asian-style slaw into the equation.

Provided by Curtis Williams

Time 1h10m

Yield 4

Number Of Ingredients 25

1 tablespoon sake
1 tablespoon mirin (Japanese sweet wine)
1 teaspoon grated ginger
1 teaspoon grated garlic
1 teaspoon soy sauce
ground black pepper to taste
1 ½ pounds boneless, skinless chicken thighs
½ cup mayonnaise
¼ cup white miso paste
⅛ cup grated ginger
⅛ cup grated garlic
⅛ cup soy sauce
1 teaspoon honey
1 cup shredded cabbage
¾ cup shredded carrots
½ cup chopped fresh cilantro
½ cup cider vinegar
¼ cup finely chopped green onions
2 tablespoons toasted sesame oil
2 tablespoons sesame seeds
salt and ground black pepper to taste
1 cup peanut oil for frying, or as needed
½ cup cornstarch
4 potato buns, split and toasted
½ teaspoon shichimi togarashi (Japanese seven spice), or to taste

Steps:

  • Combine sake, mirin, ginger, garlic, soy sauce, and pepper for marinade in a glass or ceramic bowl and mix well. Add chicken and marinate in the refrigerator for at least 30 minutes.
  • While chicken marinates, combine mayonnaise, miso, ginger, garlic, soy sauce, and honey for the miso mayonnaise in a bowl.
  • Combine cabbage, carrots, cilantro, vinegar, green onions, sesame oil, sesame seeds, salt, and pepper for the slaw in another bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Remove chicken from marinade and dredge in cornstarch, knocking off any excess.
  • Fry chicken in the hot oil until no longer pink in the centers and golden brown on the outsides, 4 to 5 minutes on each side.
  • Coat toasted buns with miso mayonnaise. Add fried chicken, top with slaw, and sprinkle each with togarashi. Serve.

MISO CHICKEN IN GINGER, LEEK AND SCALLION BROTH

Miso Chicken in Ginger, Leek and Scallion Broth image

This chicken dish gets most of its flavor from miso, the traditional Japanese paste made from fermented soybeans or other grains, and relies on boneless, skinless thighs, which are nearly impossible to overcook. First simmered in water (or chicken broth for depth), the thighs are then slathered with a seasoned miso mixture and roasted until the miso forms a beautiful glaze. Use light miso (yellow or white) for a mild, nutty flavor, or dark miso (red or brown) for a deeper rustic quality. Both kinds keep up to a year in the refrigerator.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 13

8 boneless, skinless chicken thighs (about 3 pounds)
Salt and pepper
2 large garlic cloves, smashed but not peeled, plus 1/2 teaspoon grated garlic
1 (2-inch) piece ginger, peeled and thickly sliced, plus 1 teaspoon grated fresh ginger
1 small onion, thinly sliced
6 cups chicken broth (optional)
1/4 cup mirin
4 tablespoons yellow or red miso
1/2 teaspoon gochugaru (Korean red-pepper flakes)
2 tablespoons rice wine vinegar
2 tablespoons granulated sugar
2 cups leeks, white and tender green parts, chopped into 1/2-inch pieces
1/2 cup thinly sliced scallions, for garnish

Steps:

  • Put chicken thighs in a large pot, seasoning well with salt and pepper on both sides. Add smashed garlic cloves, ginger slices, onion, 6 cups water (or chicken broth, if you prefer) and mirin, and bring to a boil. Reduce heat to a simmer and cook, covered, for 30 minutes, until tender. Remove chicken to a baking dish. Strain broth into a bowl. Place back into the pot, and keep warm. Heat oven to 375 degrees.
  • In a small bowl, combine miso, gochugaru, grated garlic, grated ginger, vinegar and sugar. Add a little hot broth to thin, then smear mixture over chicken and coat well.
  • Bake chicken until browned and glazed, about 20 minutes.
  • While chicken is cooking, bring broth to a simmer, taste and adjust seasoning. Add leeks and cook until just done - soft, but still green, about 5 minutes.
  • To serve, slice chicken into 1/4-inch pieces and divide among large soup bowls, then ladle broth on top. Spoon any remaining miso mixture from pan over chicken. Garnish with scallions.

GINGER-LIME CHICKEN

Ginger-Lime Chicken image

Though this may look like regular old chicken, don't be fooled: It's buzzing with the bright flavors of ginger and lime. Mayonnaise is the secret ingredient in this recipe, which is a trick J. Kenji López-Alt has written about. When slathered on boneless chicken and cooked, the beloved condiment carries flavor, sticks to the meat well, encourages browning and prevents the pieces of lime zest and ginger - or whatever seasonings you choose - from burning. Try this technique first with ginger and lime zest, then experiment with grated garlic, jalapeño, lemon, Parmesan and whatever else you can imagine. Serve with a pile of white rice and a fresh green salad topped with thinly sliced avocado.

Time 15m

Yield 4 servings

Number Of Ingredients 5

1 1/2 to 2 pounds boneless, skinless chicken thighs or breasts
Kosher salt and black pepper
1/3 cup mayonnaise
1 tablespoon lime zest (from about 2 limes), plus lime wedges, for serving
1 tablespoon finely grated fresh ginger (from a 3-inch piece of peeled ginger)

Steps:

  • Pat the chicken dry and season all over with 1 1/2 teaspoons salt. In a medium bowl, stir together the mayonnaise, lime zest and ginger; season with salt and pepper. Add the chicken to the mayonnaise mixture and stir to coat. (The chicken can sit in the marinade for up to 8 hours in the fridge. Let come to room temperature before cooking.)
  • To grill: Heat a grill to medium-high. Grill the chicken over direct heat until cooked through and juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts, turning as necessary to avoid burning.
  • To cook in a skillet: Heat a large skillet over medium-high. Cook the chicken until juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts.
  • Serve chicken with lime wedges, for squeezing on top.

3 tablespoons mirin (Japanese sweet wine)
3 tablespoons rice wine
3 tablespoons soy sauce
3 tablespoons honey
2 cloves garlic, minced
2 teaspoons minced fresh ginger
1 pound boneless, skinless chicken thighs
1 teaspoon sesame seeds

Golden Chicken Sandwich As Made By Chef Kuniko Yagi Recipe by Tasty image

Chef Kuniko Yagi of Pikunico, a Japanese fried chicken restaurant in Los Angeles, shares the recipe for what she calls "the best sandwich ever." Layered with fresh ingredients and boneless, crispy, gluten-free chicken thighs, this sandwich is worth the extra effort to pull together. Serve it with her sesame cole slaw!

Provided by Betsy Carter

Categories     Dinner

Time 45m

Yield 2 servings

Number Of Ingredients 19

1 teaspoon fresh ginger, grated
1 teaspoon garlic, grated
½ teaspoon tamari, or soy sauce
2 ½ teaspoons Japanese seasoning salt, divided
1 large egg, beaten
2 tablespoons potato starch
16 oz boneless, skinless chicken thighs
4 cups rice bran oil, for frying
2 cups gluten-free flour blend
2 teaspoons red miso
2 teaspoons honey
2 hot dog buns, halved lengthwise, toasted 7 in (17 cm)
12 slices daikon, or pickles of choice
10 slices pickled jalapenos
2 tablespoons mayonnaise
⅔ cup watercress
½ cup alfalfa sprouts
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice

Steps:

  • Marinate the chicken: In a medium bowl, whisk together the ginger, garlic, tamari, ½ teaspoon Japanese seasoning salt, egg, and potato starch. Add the chicken thighs and turn to coat. Cover the bowl with plastic wrap and marinate the chicken in the refrigerator for 15 minutes.
  • Fill a medium pot halfway with rice bran oil and heat over medium heat until it reaches 375°F (190°C).
  • Add the gluten-free flour and remaining 2 teaspoons of seasoning salt to a shallow dish and whisk to combine.
  • Coat the marinated chicken thighs in the flour mixture.
  • Fry the chicken thighs, one at a time, in the hot oil for 6-7 minutes, until golden brown and the internal temperature reaches 165°F (75°C). Remove from oil and let drain on a wire rack.
  • In a small bowl, mix together the miso and honey.
  • Spread the miso jam over the bottoms of the toasted hot dog buns. Lay the pickled daikon and jalapeño slices over the miso jam, then place the chicken karaage on top. Spread the mayonnaise over the top bun and place the watercress on top. Arrange the alfalfa sprouts over the chicken and drizzle with the olive oil and lemon juice.
  • Close the sandwich and secure each side with a wooden skewer. Cut in half, then serve alongside the cole slaw.
  • Enjoy!

Tips:

  • To save time, use pre-cooked chicken. Shredded chicken from a rotisserie chicken works well.
  • The marinade can be made ahead of time and stored in the refrigerator for up to 24 hours. This allows the chicken to soak up all the flavors.
  • If you don't have a grill, you can cook the chicken in a grill pan or in the oven.
  • To make the ginger mayonnaise, simply whisk together the mayonnaise, ginger, garlic, and soy sauce.
  • For a healthier version of the sandwich, use whole-wheat bread and low-fat mayonnaise.

Conclusion:

Miso chicken sandwiches with ginger mayonnaise are a delicious and easy-to-make meal. They're perfect for a quick lunch or dinner, and they can be customized to your liking. Whether you like your sandwiches spicy, tangy, or sweet, there's a miso chicken sandwich out there for you. So next time you're looking for a new sandwich recipe to try, give this one a try.
