Dashi is a basic stock used in Japanese cooking which is made by boiling dried kelp (seaweed) and dried bonito (fish). Instant dashi granules are sold in conveniently-sized jars or packets and vary in strength. Add more dashi to your soup if you want a stronger stock. You can use yellow, white or red miso paste for this soup. Yellow miso is sweet and creamy, red miso is stronger and saltier.

Tips:

  • Choose the right type of miso. There are many different types of miso, each with its own unique flavor. For miso shiru, a light-colored miso such as white or yellow miso is a good choice. These miso types have a mild flavor that will not overpower the other ingredients in the soup.
  • Use good quality dashi. Dashi is the broth that forms the base of miso shiru. It is important to use good quality dashi, as this will greatly affect the flavor of the soup. If you are short on time, you can use instant dashi powder or granules. However, if you have the time, making your own dashi from scratch is definitely worth the effort.
  • Don't boil the miso. Miso is a fermented food, and boiling it will kill the beneficial bacteria that give it its characteristic flavor. When adding the miso to the soup, be sure to remove the pot from the heat and stir the miso in until it is dissolved.
  • Add your favorite toppings. There are many different toppings that can be added to miso shiru, such as tofu, wakame seaweed, green onions, and mushrooms. Feel free to experiment with different toppings until you find a combination that you enjoy.

Conclusion:

Miso shiru is a delicious and healthy soup that is easy to make at home. With a few simple ingredients, you can create a flavorful and nutritious meal that the whole family will enjoy. So next time you're looking for a quick and easy weeknight meal, give miso shiru a try.
