1/2 lb ground pork
1/2 lb ground chicken (or turkey, or veal )
1/2 cup breadcrumbs
1 medium onion, peeled and finely chopped
2 carrots, peeled and finely chopped
1 garlic clove, peeled and finely chopped
1/2 cup celery, finely chopped
1/4 cup fresh parsley, finely chopped
1 egg
1/2 cup half-and-half
1/4 cup seltzer water
10 -12 slices bacon
1 cup milk
1 cup beef bouillon
1 tablespoon flour
1 tablespoon water
1 tablespoon jam (rhubarb or other tart fruit jam)
1 teaspoon Kitchen Bouquet (or other gravy browning liquid)

Steps:

  • Combine the meat, breadcrumbs, onion, carrots, garlic, celery, parsley, egg, 1/4 cup of the half-and-half, and 1/4 cup seltzer water until just mixed. Be careful to not over work the mixture.
  • Form into a loaf, place it in a baking dish, then completely cover the loaf with overlapping strips of bacon.
  • Preheat oven to 425°F Put the meatloaf in the preheated oven for about 20 minutes to crisp up the bacon, then reduce the heat to 325F.Combine the milk and the beef bouillon, then pour it into the pan around the loaf. Cook for 30 more minutes.
  • To make gravy, pour the pan liquid into a saucepan along with the remaining 1/4 cup half-and-half; turn the heat on medium and bring to a simmer. Whisk together the flour and water, then stir it into the pan; continue to stir until the gravy thickens. Whisk in the rhubarb jam and Kitchen Bouquet. Once the jam has melted, transfer to a gravy boat.
  • Slice the meatloaf and serve with the gravy, potatoes or noodles,.

Hubby used to disappear into the woods and bring something home and announce "This is supper, ok?" Being a novice in the kitchen and a big city gal at the same time, I deviced this one. Been using this recipe ever since (38 years now). I serve this with Fried Potatoes.

1 squirrels or 1 hares
1 quart water
1 tablespoon lemon juice
1 tablespoon salt
1/4 cup shortening or 1/4 cup bacon grease
1/3 cup flour
salt and pepper
1 pint meat stock, about

Steps:

  • Combine the water, lemon juice and salt.
  • Soak meat for 1 to 2 hours, removes some of the game flavor (also a good soak for fish).
  • Combine flour, salt and pepper.
  • Dredge meat to coat on all sides.
  • Heat oven to 325ºF.
  • Heat grease in a heavy skillet.
  • Fry meat 3 minutes on all sides and transfer to a baking dish.
  • Add the remaining flour mix to the leftover grease and brown lightly.
  • Transfer this mix to the baking dish.
  • Pour the stock into baking dish and bake for 1 1/2 hour.
  • Keep an eye on the moisture, the flour will make a gravy, and you may have to add more liquid.
