MOCK TUNA SALAD (CHICKPEA SALAD)

Mock Tuna Salad (Chickpea Salad) image

Made with chickpeas (garbanzo beans), this is a wonderful sandwich filling, especially for vegetarians who miss tuna salad. I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.

Time 10m

Yield 3-4 serving(s)

Number Of Ingredients 7

1 (16 ounce) can chickpeas, mashed (garbanzo beans)
2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, finely chopped
salt and pepper
1 tablespoon finely minced yellow onion (optional)

Steps:

  • In a medium bowl, combine mashed chickpeas, mayonnaise, mustard, relish, chopped green onions, salt, pepper, and yellow onion (if desired).
  • Mix well.

Tips:

  • Use canned chickpeas that are packed in water, not brine, and rinse them thoroughly before using.
  • For a smoother consistency, mash the chickpeas with a fork or potato masher before adding the other ingredients.
  • If you like a more traditional tuna salad flavor, add a teaspoon of Dijon mustard and a pinch of dried dill to the mixture.
  • For a more colorful salad, add some chopped red onion, celery, or carrots.
  • Serve the salad on a bed of lettuce or spinach, or in a whole-wheat pita pocket or sandwich.

Conclusion:

This mock tuna salad is a delicious and healthy alternative to traditional tuna salad. It's perfect for a quick and easy lunch or dinner, and it's also a great way to get your daily dose of protein and fiber. So next time you're looking for a tasty and nutritious salad, give this chickpea salad a try.
