CHERRY-PINEAPPLE SALAD

I'm pretty sure I found this recipe in a church cookbook--the ideal place to find great recipes. Simply stated, "a refreshing blend of cherry and lemon flavors that is easy to make and sure to please." I made this for our daughter's high school graduation party, and I'm still making it today--20 yrs. later! As with many two-(or more) layered jello salads, be patient for first layer to set.

BING CHERRY SALAD

Bing Cherry Salad image

This is a salad my great grandma use to make and is one of my favorites to eat during the holiday season. Most people make this creamy by melting the cream cheese or dissolving it in the juice. We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

  • Choose a gelatin that is flavored to complement the fruits you are using: For example, a lemon-flavored gelatin would be a good choice for a cherry-pineapple salad.
  • Chill the salad thoroughly before serving: This will help it to set properly and make it easier to slice.
  • Serve the salad with a dollop of whipped cream or yogurt: This will add a touch of richness and creaminess.
