Steps:
- Place Jell-O in a large bowl. Add 1 cup reserved cherry juice and boiling water. Whisk thoroughly until Jell-O is dissolved. Transfer to refrigerator and chill until beginning to set, about 15 minutes.
- Remove from refrigerator, and add either sour cream or whipped cream cheese. Beat with a hand-held electric mixer until smooth. Add cherries; stir to combine. Pour mixture into a 3-quart mold. Refrigerate until firm.
- Quickly dip mold into a bowl of warm water. Wipe mold dry. Place a serving plate on top of mold and invert. Repeat dipping process if necessary to release Jell-O. Serve immediately or chill until serving.
MOLDED JELL-O SALAD

- In a bowl, combine the dissolved Jell-O, cold water, mayonnaise, and vinegar and mix thoroughly. Transfer to the freezer or refrigerator and allow it to chill well. When it begins to get firm, remove it from the freezer or refrigerator and beat with an electric beater until fluffy. Add cottage cheese and chopped vegetables. Before you put the mixture into a mold, decorate the bottom of the mold with olives or parsley so that when you unmold it there will be a pretty design on top.
- Another variation is to forego the vinegar and add fruit with the cottage cheese. Just be sure that the salad is firm (overnight in the refrigerator or a few hours in the freezer), otherwise it will be messy when you unmold it.
MOM'S ' MOLDED' (JELLO) SALAD
I hate the term 'molded salad' - it sounds like something green & fuzzy. This is my mother's Jello salad recipe. Most people I know will turn up their nose when I say Jello salad but there are never leftovers. Hmmmm...... I'm not positive on the exact ounces - small boxs of jello, big can of cranberry & small can of pineapple. This multiplies easily & can be made several days ahead & kept refrigerated.

Steps:
- Dissolve Jello in boiling water. Add cranberry & mix well.
- Refrigerate until almost solidly jelled. Add undrained pineapple & 1 cup cold water. Pour into a large pan or mold & refrigerate until set.
- Serve with dressing.

EASY MOLDED CHICKEN SALAD
This is a tasty Molded Chicken Salad. It is a culmination of a couple of recipes I found on the web. I don't have a jello mold so I use an 8x8" square Pyrex dish. The portions are quite thick. I am sure you can use a 9x13" baking instead if you want thinner portions.

Steps:
- Put the diced bell peppers and green onions in the same bowl.
- Chill in refrigarator until ready to use.
- Pour the chicken broth into a saucepan and bring it to a boil
- Meanwhile, pour the cold water into a large mixing bowl.
- Sprinkle the Knox Gelatin into it, stirring as you add until well mixed
- Pour the chicken broth into the gelatin mixture, using a wire whisk, until gelatin is completely dissolved.
- Add the Mayonnaise or Miracle Whip using the wire whisk until well mixed and no lumps appear.
- Add the bell pepper and green onion mixture and mix well.
- Add the diced chicken and mix well.
- Pour the mixture into desired baking dish or jello mold.
- Cover with lid or plastic wrap.
- Refrigerate for 4 hours or untl set.
- If using a Jello mold, unmold it onto a plate.
- For a nice touch. place some lettuce leaves on the plate before unmolding the jello salad.
- If using a cake pan or pyrex dish, serve the jello salad from it.
