2 cloves garlic, minced
1/2 onion, diced
1 cup ketchup
1/3 cup molasses
1/3 cup brown sugar
4 tablespoons minced chipotle peppers in adobo sauce
4 tablespoons distilled vinegar
1 tablespoon Worcestershire sauce
Dash salt

Steps:

  • Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar (or less to taste), Worcestershire sauce and salt and stir. Allow to simmer for 20 minutes. Steps:

  • Melt butter in a saucepan and fry onion & garlic until softened.
  • Add wine vinegar, water (or stock), English mustard, demerara sugar, lemon slice, bay leaf & cayenne pepper. Bring to the boil and simmer for 15 mins.
  • Stir in remaining ingredients, and season with salt & pepper. Simmer for a further 5-10 mins)

You can adjust for the amount of sauce you need. I just adjusted to make 2-3 cups for 2 packages of ribs (about 4-5 lbs.) and I used Splenda brown sugar for my husband.

6 cups ketchup (Heinz only)
1 1/2 cups vinegar
9 tablespoons mustard (Goulden's)
