Steps:
- Saute onions and celery in butter until soft. Add chicken, salt, and pepper. Saute a minute or so to marry flavors.
- In a large bowl, combine soups, milk, rice, broccoli, onion/chicken mixture. Fold in 2 cups cheese.
- Pour into a greased 2 quart casserole dish. Top with remaining 1/2 cup cheese (I sometimes use more -- it's terrible, I know! ;).
- Bake at 350 degrees for 30-40 minutes uncovered.
Tips:
- Choose the right broccoli. Look for broccoli that is deep green in color and has tight florets. Avoid broccoli that is yellowing or has loose florets.
- Prepare the broccoli properly. Cut the broccoli into bite-sized florets and wash them thoroughly. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender. Drain the broccoli and immediately transfer it to a bowl of ice water to stop the cooking process.
- Make a flavorful sauce. The sauce is what really makes this casserole special. Be sure to use a good quality cheese, such as cheddar or Gruyère. You can also add other ingredients to the sauce, such as cooked bacon, diced onion, or chopped nuts.
- Don't overcook the casserole. The broccoli should be tender but still have a little bit of crunch. Overcooking the casserole will make the broccoli mushy.
- Serve the casserole hot. This casserole is best served hot out of the oven. You can garnish it with chopped parsley or chives.
Conclusion:
Broccoli casserole is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to get your kids to eat their vegetables. With so many different variations, there's sure to be a broccoli casserole recipe that everyone will love.
