Number Of Ingredients 13

1 large size head cabbage (about 3-5 pounds)
1 lb ground beef (or 1 1/2 lbs if not using pork)
1/2 pound ground pork (omit if using all beef)
1 medium onion, chopped small
3 teaspoon minced garlic
1 teaspoon kosher salt
3/4 teaspoon ground black pepper
1 teaspoon parsley flakes
2 eggs
1/4 cup ketchup
2 tablespoon tomato paste
1 1/2 cups cooked, cooled white rice
3 10.75 ounce cans tomato soup (if using a deep dish pan with a 3" side use 4 cans)

Steps:

  • Remove core from cabbage. Place whole head in a large pot filled with boiling, salted water. Cover and cook 3 minutes, or until softened enough to pull off individual leaves. If the leaves do not pull off easily, return the cabbage to the pot to boil a minute or two more. When the leaves are cool enough, use a paring knife to cut away the thick center stem from each leaf, without cutting all the way through.
  • In a large bowl, add in the ground beef, pork, rice, onion, garlic, salt, pepper, eggs, ketchup, tomato paste, and parsley. Mix gently to combine. Add in 2/3rd of a can of tomato soup (almost 3/4 of a cup) and mix.
  • To stuff the leaves lay down a single large leaf with the cut edge facing you (where the stem was) and place about a 1/2 cup of the meat mixture in the lower third of the leave. If the leaf is huge add more, if smaller add less meat. Fold the sides of the leaf over the meat and roll the cabbage up (like rolling a burrito). Repeat until all of the leaves are stuffed. If you have extra meat just roll it up as meatballs and place it in the baking pan with the stuffed cabbage.
  • Preheat oven to 350F, rack in the center.
  • In a large deep dish (4" at least) baking pan (or two 9×13" glass pans), spread out the remaining soup from the open can on the bottom of the pan. Open up a 2nd can and pour out 1/2 of it and spread out until the bottom of the pan in covered in a light coating.
  • Place a single layer of stuffed cabbages on the bottom of your pan. Add the remaining half of the 2nd can of tomato soup. If you have leaves that are too small to stuff or are badly torn, add them on top of the soup.
  • Add the 2nd layer of stuffed cabbage (you must make sure you have a 1/2" gap at the top of your pan and stuffed cabbage. It cannot go over the top of the pan. Top with the remaining can of tomato soup and spread out evenly.
  • Spray the underneath of a large piece of foil. Place foil side down on the pan and close tightly around the dish. Place the pan on a larger cookie sheet to catch any spillovers.
  • Bake for 3 - 4 hours or until the cabbage is tender when pierced with a knife. (I start to check mine after 2 hours 45 minutes).
  • Remove from the oven, uncover and allow to cool for 15 minutes before serving.

MOM'S CABBAGE ROLLS A DIFFERENT WAY

Mom's Cabbage Rolls a Different Way image

This cabbage roll is made differently & contains no tomatoes. My Mom had a few specialty dishes and this was one of them. She learned how to make cabbage rolls with a sweet & sour sauce from her Hungarian sister-in-law. My Pop didn't like that sauce or tomato sauce on them. She created her own recipe to please him and it was always his favorite dish she made for 53 yrs. Mom & Pop are gone now so this dish lives on thru me. These are the ultimate in comfort food and I guarantee you will love them. My son & grandson doesn't like cabbage so I make some without cabbage...like meatballs & gravy.

Number Of Ingredients 20

1 large head cabbage
1 tablespoon(s) butter
2 cup(s) long grained rice
1 teaspoon(s) salt
4 cup(s) water
3 pound(s) lean ground beef or 2 lb beef and 1 lb grund turkey
1 large onion, chopped fine in food processor with garlic
4 clove(s) garlic, minced
1 1/4 teaspoon(s) seasoned salt
1/2 teaspoon(s) freshly ground pepper
1/8 teaspoon(s) freshly grated nutmeg (i use 1/2 a fresh nut)
1/2 cup(s) milk
2 cup(s) cooked cooled rice (from the rice above)
1 cup(s) flour for dredging rolls, divided use
2 tablespoon(s) butter (start with 2 & add more as needed for browning)
2 tablespoon(s) vegetable oil (start with 2 & add more as needed for browning)
4 cup(s) beef broth (mom used 4 boullion cubes to 4 cups water)
1/2 teaspoon(s) white pepper
1/8 teaspoon(s) freshly grated nutmeg (1/2 a fresh nut)
2 tablespoon(s) brown sugar

Steps:

  • Core and remove outside leaves of cabbage. Place core side down in 1 1/2 inches of water in a Pyrex bowl covered with plastic wrap. Steam in the microwave until outer leaves are semi-soft and peel them off a few at a time until all are done. (about 10 minutes)
  • Heat 4qt saucepan (with tight fitting lid) over med heat. Add butter and rice. Stir and cook until rice starts getting white specks on it. Add salt & water, bring to a boil, reduce heat, cover and simmer for 20 minutes (35 min for brown rice). Fluff with a fork and set aside. Remove 2 cups and set aside to cool while making filling. Serve the cabbage rolls over the remaining rice.
  • Heat oven to 375 degrees. In a large bowl, mix ground beef, onions, garlic and seasonings. Stir in milk and add 2 cups of the cooled cooked rice last. Mix well and stuff cabbage leaves. Trim off hard core parts and starting at the widest end place a few tablespoons of filling. Roll up but don't fold ends in. Push the ends of the cabbage into the ends of the roll o make a belly button. This works great to hold them together when browning. It eliminates the need for toothpicks. Mom always used them and I almost swallowed one several times. I learned the belly button trick from my Hungarian aunt. : )
  • When all done making rolls, heat butter & oil in large heavy skillet over med/high heat. Dredge each roll in flour and pan fry until browned on all sides. Remove to large lasagna baking pan or 2 smaller pans. When rolls are all browned, heat a little more oil or butter in the same skillet if necessary to make a roux. Scrape up browned bits. Add abt 2 tablespoons of leftover dredging flour and cook & stir for 1 minute. Whisk in beef broth until it becomes a thin/med gravy. Add white pepper and nutmeg. I usually almost double this gravy recipe. You seem to need more when you use 2 pans, but this recipe makes alot of rolls, plus I make a sm pan of them with no cabbage for my son who is anti cabbage. Next, pour gravy over cabbage rolls and sprinkle brown sugar over top. Cover with heavy duty foil and bake for 1 1/4 hours. Serve over remaining cooked rice. Enjoy!!

: MOM'S CABBAGE ROLLS (HOLUBTSI) RECIPE

: Mom's Cabbage Rolls (Holubtsi) Recipe image

Provided by carol gorman

Number Of Ingredients 8

1 medium-sized head of cabbage
3 medium onions, chopped
2-3 tbsp butter or margarine
1/2 lb each of ground pork AND medium hamburger
2 cups long grain rice for one medium cabbage
1-19 oz can tomato juice
4 tsp salt
ground pepper

Steps:

  • Remove the core, and steam the cabbage. When steaming the cabbage don't over-do it--just long enough so the leaves will separate easily. - Fry onions in butter until they are transparent. Parboil the rice in a little water (just to cover the rice) and bring to a low simmer. Watch carefully - just until water is absorbed. The rice will still be a little 'hard'. It will soften up during baking. - Add raw ground pork, beef, and fried onions. Mix well. Season with salt and pepper to taste. - Grease a roaster (a small covered enameled roaster works well, but a covered casserole dish should be just fine) with a little oil and cover the bottom and sides of the roaster with the outer cabbage leaves. Roll filling in an inner cabbage leaf to make a roll. Place rolls in roaster, fitting them snugly together with the seam on the bottom to prevent unrolling. Rolls can be placed in layers to fill the roaster. When the rolls are all in place, pour the tomato juice on top. Note: It is not necessary to use a whole can of tomato juice; it may boil over in the oven. A tray under the roaster to catch any overflow is a good idea. Cover all of the cabbage rolls with left over cabbage leaves. Cover the roaster, then bake in the oven at 400 F for 30 minutes, then 350 for 1 to 1-1/2 hours.

Tips:

  • Use a variety of vegetables. This will add flavor and texture to your cabbage rolls. Some good options include carrots, celery, onions, mushrooms, and bell peppers.
  • Don't overcook the cabbage leaves. They should be tender but still have a little bit of crunch.
  • Make sure the filling is well-seasoned. This is what will give your cabbage rolls their flavor.
  • Use a flavorful tomato sauce. This will help to bring all of the flavors together.
  • Cook the cabbage rolls until they are heated through. This will usually take about 30 minutes.

Conclusion:

Cabbage rolls are a delicious and hearty meal that can be enjoyed by people of all ages. They are also a great way to use up leftover vegetables. With a little planning, you can easily make cabbage rolls at home. So next time you're looking for a new and exciting recipe, give cabbage rolls a try!
