3 to 4 pounds sweet potatoes
6 tablespoons unsalted butter (melted)
1/4 cup maple syrup (real maple syrup, not pancake syrup)
1 cup dark brown sugar (light brown sugar also will work)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups miniature marshmallows (optional)

Steps:

  • Preheat oven to 375F. Spray a 3 quart baking dish with nonstick cooking spray and set aside.
  • Peel sweet potatoes and rinse clean. Slice potatoes to 1/2 inch thick slices. Try to keep them roughly the same thickness so they cook evenly.
  • In a medium bowl, combine brown sugar, melted butter, maple syrup, ground cinnamon, vanilla extract and salt. Whisk until smooth. If the mixture is very thick, pop in the microwave for 30 seconds to loosen it up.
  • Transfer sliced sweet potatoes to the prepared baking dish and spread evenly.
  • Drizzle the brown sugar mixture over the top of the sweet potatoes and toss to combine. You want each piece of sweet potato coated in the mixture.
  • Cover the baking dish with foil and bake for 20 minutes. Remove foil and gently stir. Bake for another 15 minutes (no foil) and again, gently stir. Check to see how tender the sweet potatoes are at this point. Bake for another 5 to 15 minutes, depending on the size and thickness of your potatoes. Make sure they are tender (but not falling apart) before removing.
  • If adding marshmallows, sprinkle marshmallows on top and pop back in the oven for 5 minutes. Serve immediately.

1 (8 ounce) can crushed pineapple, drained
3 tablespoons butter

This is my great-grandma's candied yams recipe. I started making them a few years ago, now everyone asks for them every year. The secret I think is in the orange juice and slow cooking.

8 medium yams, peeled and cubed
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
6 tablespoons unsalted butter, cut into small chunks
1 cup orange juice, or as needed
1 cup miniature marshmallows, or to taste

Steps:

  • Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
  • While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
  • Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.
  • Peel and cut yams into chunks and place in a large baking dish. Dot with butter and sprinkle with sugar mixture so all yams are coated. Carefully pour enough orange juice into the bottom of baking dish to measure 1/2 inch.

I'm going to do my best to write what my "Aunt Poddy" tells me every year, using the amounts as best as I can, but I will still call her every year just to have her walk me through it!!!! My brother got to taste them this year and he said it was just like mom's, so maybe I'm getting it right!!!

1 (29 ounce) can sweet potatoes (save the liquid)
1 1/2 cups brown sugar
