MOM'S DRIED BEEF AND CORN CASSEROLE

Mom's Dried Beef and Corn Casserole image

This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

Tips:

  • Use fresh or frozen corn. Fresh corn on the cob is best, but frozen corn will also work well. If using frozen corn, thaw it completely before using.
  • Don't overcook the corn. Corn should be cooked until it is tender, but not mushy. Overcooked corn will lose its flavor and texture.
  • Use a variety of ingredients. Don't be afraid to experiment with different ingredients in your corn casserole. Some popular additions include cheese, bacon, jalapeños, and green onions.
  • Make it ahead of time. Corn casserole can be made ahead of time and reheated just before serving. This makes it a great dish for potlucks and holiday gatherings.

Conclusion:

Corn casserole is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover corn, and it can be easily customized to suit your own taste preferences. Whether you are looking for a simple side dish or a hearty main course, corn casserole is sure to please.
