ANN'S DIRTY RICE

Ann's Dirty Rice image

Quick and easy dinner. A family favorite. This was my mother's recipe. In my humble opinion she was the best cook ever. This recipe is very versatile and can be seasoned so many different ways. Please feel free to try your own favorite seasoning combinations. My two boys who are now 27 and 31 and my husband request this simple dinner frequently and I have taught the boys to make it but they say mine tastes different. I love to cook and they love to eat. This is such a simple recipe and I usually double so they have plenty to take home with them. It heats up well.

MIMI'S DIRTY RICE

Mimi's Dirty Rice image

This dirty rice recipe came from my mom in 1996, and I don't have any idea where she got it. It can be adjusted for your tastes -- more or less of the "7 seasonings" to make it hotter. I usually make it and put it in stuffed peppers, but it could be a stand alone dish or side. We love it!

1/2 green pepper, chopped
1/2-1 tablespoon margarine
2 lbs mild sausage
1 lb hot sausage
2 (10 3/4 ounce) cans chicken broth
1 (10 3/4 ounce) can water (use empty broth can)
2 cups uncooked long grain white rice

  • Add the trinity: This is a mixture of onions, celery, and bell peppers. It is a classic ingredient in many Cajun dishes.
  • Add the ground beef: This is optional, but it adds protein and flavor to the dish.
  • Cook the rice until it is tender: This will take about 30 minutes.
