MY MOM'S EASY POTATO SOUP

My Mom's Easy Potato Soup image

I know there are a lot of potato soup recipes on here, but this is the best I have ever had. The onion flavor adds a little something extra, and it is so easy and delicious. Everyone loves this soup...even my incredibly picky roommate. It cooks for a while; if you have a crock pot, which I don't, you can let is simmer for a while and forget about it. Also, this can be doubled easily. I hope you all enjoy.

Tips:

  • Use a variety of potatoes: Different types of potatoes will give your soup different flavors and textures. For a creamy soup, use Yukon Gold or russet potatoes. For a more rustic soup, use red potatoes or fingerling potatoes.
  • Don't overcook the potatoes: Overcooked potatoes will make your soup gluey. Cook them just until they are tender when pierced with a fork.
  • Add your vegetables at the right time: If you add your vegetables too early, they will overcook and become mushy. Add them towards the end of the cooking time so that they retain their color and crunch.
  • Season your soup to taste: Taste your soup throughout the cooking process and adjust the seasonings as needed. You may want to add more salt, pepper, garlic, or herbs.
  • Garnish your soup before serving: A simple garnish can make your soup look more appealing. Try adding a dollop of sour cream, a sprinkle of chopped chives, or a drizzle of olive oil.

Conclusion:

Potato soup is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying soup that will warm you up on a cold day. So next time you're looking for a quick and easy meal, give potato soup a try.
