MOM'S QUINOA BURGERS

Mom's Quinoa Burgers image

I made these with leftover quinoa and some vegetables I had in the fridge. Super easy! Great on a multigrain bun with some tomatoes, spinach, and your favorite spread! My 2 1/2-year-old said, I love it Mommy! If necessary, while frying, flatten the burgers with the back of your spatula (but don't make them too thin).

Time 35m

Number Of Ingredients 14

1/2 cup rinsed quinoa
1 medium carrot, cut in large chunks
6 scallions, thinly sliced
15 ounces great northern beans, drained and rinsed
1/4 cup plain dried breadcrumbs
1 large egg, lightly beaten
1 tablespoon ground cumin
Coarse salt
Ground pepper
2 tablespoons olive oil
1/2 cup plain nonfat Greek yogurt
1 tablespoon fresh lemon juice
4 pitas (each 6 inches)
1/2 English cucumber, thinly sliced diagonally

Steps:

  • In a small saucepan, bring 3/4 cup water to a boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12 to 14 minutes; set aside.
  • In a food processor, pulse carrot until finely chopped. Add cooked quinoa, half the scallions, beans, breadcrumbs, egg, cumin, 1 teaspoon salt, and 1/4 teaspoon pepper; pulse until combined but still slightly chunky.
  • Form mixture into four 3/4-inch-thick patties (dip hands in water to prevent sticking). If too soft, refrigerate 10 minutes to firm. In a large nonstick skillet, heat oil over medium; cook burgers until browned and cooked through, 8 to 10 minutes per side.
  • Meanwhile, in a small bowl, combine yogurt, lemon juice, and the remaining scallions; season with salt and pepper. Serve burgers in pita topped with cucumber and yogurt sauce.

Tips:

  • Cook the quinoa according to the package instructions and let it cool completely before forming the burgers. This will help the burgers hold their shape better.
  • Use a food processor to chop the vegetables and nuts. This will make it easier to mix them into the quinoa and create a smooth, even texture.
  • If the mixture is too dry, add a little bit of water or vegetable broth. If it's too wet, add a little bit more quinoa or bread crumbs.
  • Form the burgers into patties that are about 1/2-inch thick. Make sure they're packed tightly so they don't fall apart when you cook them.
  • Cook the burgers over medium heat in a nonstick skillet. Cook them for about 3-4 minutes per side, or until they're golden brown and cooked through.
  • Serve the burgers on buns with your favorite toppings. Some popular toppings include lettuce, tomato, onion, avocado, and cheese.

Conclusion:

Quinoa burgers are a delicious and healthy alternative to traditional beef burgers. They're packed with protein, fiber, and nutrients, and they're also relatively easy to make. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
