2 cups converted long-grain white rice
1 (32 fluid ounce) container chicken broth
½ lemon, juiced
1 teaspoon salt
3 bay leaves

Steps:

1 cup white rice or 1 cup brown rice
1 -2 garlic clove (minced)
1 tablespoon vegetable oil or 1 tablespoon olive oil
6 ounces tomato sauce (the small can)
1/4-1/2 white onion (regular size- sliced or chopped)
1 tablespoon chicken bouillon (or 1 cube)
1 tablespoon cumin powder
1 teaspoon ground pepper
2 tablespoons fresh cilantro
1/2 cup peas
1/2 cup carrot
1 tablespoon lemon pepper
1/4 cup bell pepper

  • Over medium heat, brown rice with oil, garlic and onion. Make sure not to burn the rice; it will be just a little toasted.
