PERFECT GRILLED CHICKEN

- Mix together the olive oil, honey, mustard, salt, thyme, oregano and lemon juice in a large shallow container.
- Pound the chicken breasts to uniform thickness and add them to the marinade. Cover and marinate in the fridge for at least 8 hours.
- Heat a grill pan over medium-high heat. Grill the chicken in batches until golden brown on the first side, 4 to 5 minutes. Flip and cook until golden brown on the other side and cooked all the way through, another 4 to 5 minutes. Let the chicken cool.
- Transfer the chicken to freezer bags individually and in pairs, so it's easy to defrost the exact amount you need.

- Mix lemon juice, dressing, and garlic thoroughly in a covered container large enough to hold all the chicken.
- Wash and pat dry chicken parts. Place in container with marinade, and mix to completely coat. Cover. Place in refrigerator overnight, turning a couple of times to coat. Must marinate for at least 3 hours.
- Drain chicken. Grill over medium heat till juices run clear.

MONTANA CHICKEN
The basis for this recipe was one I got from The Montana Cookbook, which I purchased umpteen years ago when we visited Glacier National Park. I've definitely tweeked it a bit over the years to get exactly the flavor I wanted. We've always just refered to it as "montana chicken". It's sweet and tart and goes well with brown rice and stir-fried broccoli.

- Place chicken pieces in a single layer in a large, shallow baking pan.
- Combine next nine ingrediants plus reserved fruit juices in a saucepan and cook, stirring constantly, over medium-low heat until thickened.
- Coat chicken peices with sauce, reserving unused sauce.
- Bake, covered, for about 45 minutes at 350, or until done.
- Add pineapple and oranges to sauce and heat through. Serve over chicken.
