MOUNTAIN VIEW LINDA'S PARISIAN BURGER SAUCE

From Mountain View CA's much loved burger joint which closed up in the mid 80's. This is for the sauce only. Typically, the buns are oval shaped sourdough - grilled, 2 hamburger patties (I use only one), slice of cheddar along with this sauce - warmed. These burgers were always served with tater tots. I love serving this sauce with the fried tater tots too.

Number Of Ingredients 6

1 1/4 cups ketchup
1 1/4 cups tomato paste
1/4 cup yellow mustard
2 teaspoons celery seeds
1 teaspoon black pepper
1/4 cup dried onion

Steps:

  • Rehydrate dried onion with enough water to cover for at least 1 hour. Drain and discard water.
  • Combine all ingredients and refrigerate for at least 1 hour. Tastes best overnight.
  • Keeps well in the refrigerator.

1 tablespoon creamy horseradish sauce
4 tablespoons real mayonnaise
2 tablespoons mustard
2 tablespoons ketchup
1/4 teaspoon black pepper

Steps:

  • Combine all ingredients in a bowl and mix together thoroughly.
  • Cover bowl with clear wrap and let sit in fridge for a half hour or more.

GRILLED BURGERS WITH ARGENTINEAN PARSLEY SAUCE



Grilled Burgers with Argentinean Parsley Sauce image

Grill thick slices of parboiled potatoes alongside the beef and serve a chunky tomato salad dressed with a simple vinaigrette. Purchased vanilla custard or pudding topped with fresh berries is a lovely way to end the meal.

Yield 2 Servings; Can be doubled

Number Of Ingredients 8

3 tablespoons chopped fresh parsley
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 large garlic clove, chopped
1/2 teaspoon cayenne pepper
1/4 teaspoon dried oregano
12 ounces lean ground beef
1/2 teaspoon salt

Steps:

  • Prepare barbecue (medium-high heat). Whisk parsley, olive oil, vinegar, garlic, 1/4 teaspoon cayenne pepper and oregano in small bowl to blend. Season sauce to taste with salt.
  • Combine beef, 1/2 teaspoon salt and remaining 1/4 teaspoon cayenne pepper in medium bowl; blend well. Shape beef into two 1-inch-thick patties. Grill beef until cooked to desired doneness, about 5 minutes per side for medium-rare.
  • Transfer beef to plates. Spoon sauce over and serve.
