MRS. P'S OLD-FASHIONED POTATO SOUP
This is the potato soup recipe my grandma used to make: potatoes simmered in chicken broth with the addition of milk, rivels, and flour to add to the creaminess. I crave this simple recipe every winter! I have tweaked the recipe by adding extra vegetables occasionally, but this is the version I like best! Top with fresh scallions or chives and more freshly ground pepper.

OLD FASHIONED POTATO & SAUSAGE SOUP
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by the Tallman Family. They run a potato processing plant in town. So, it make sense they submitted a potato recipe. As with so many of these recipes, they didn't specify how many servings it made so I am guessing.

MOTHER'S POTATO SOUP
MANY of our family-favorite recipes came from my mother-in-law, who was a wonderful cook. My husband inherited her love of cooking, and he enjoys stirring up her recipes, including this fabulous soup. We've often treated our friends to this dish, and one young man even asked for the recipe when he went off to college. -Louella Kightlinger Erie, Pennsylvania

Tips:
- Use a good quality stock. This is the base of your soup, so it's important to use a stock that is flavorful and has a rich body. You can use chicken, beef, or vegetable stock, depending on your preference.
- Don't overcook the potatoes. They should be tender, but still have a little bite to them. If you overcook them, they will become mushy and the soup will be too thick.
- Add the vegetables at the end of the cooking time. This will help them to retain their鮮豔的色彩 and nutrients.
- Season the soup to taste. Add salt and pepper to taste, and adjust the other seasonings as needed.
- Serve the soup with a dollop of sour cream, a sprinkle of chives, or a piece of crusty bread. This will add extra flavor and texture to the soup.
Conclusion:
This old-fashioned potato soup is a classic comfort food that is perfect for a cold winter day. It is easy to make, and it can be tailored to your own taste preferences. With a few simple tips, you can make a delicious and hearty potato soup that your whole family will enjoy.
