3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. 2 teaspoons baking powder
1 1/2 teaspoons kosher salt

1/2 teaspoon baking soda
1 1/4 cups (150 grams) peeled, coarsely grated carrot (from 3 medium carrots)
1 cup (150 grams) peeled, coarsely grated Granny Smith apple (from 1 medium apple)
1/2 cup (58 grams) sweetened shredded coconut
3/4 cup (75 grams) chopped pecans, toasted
3/4 cup (100 grams) golden or black raisins
1 teaspoon finely grated orange zest
1 cup (215 grams) dark brown sugar
2 large eggs, beaten to blend
1 cup whole milk yogurt
1/2 cup vegetable oil
2 tablespoons (12 grams) raw sugar

Steps:

2 cups grated raw carrots (about 2-3 peeled carrots)
1 large apple, peeled and grated
2 cups all-purpose flour
1 1/4 cups granulated sugar
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 cup shredded coconut (i use unsweetened)
3 large eggs
3/4 cup canola oil
1 1/2 teaspoons pure vanilla extract
1/4 cup unsalted butter, room temperature
4 ounces cream cheese, room temperature
3 tablespoons confectioners' sugar (powdered or icing)
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Place paper liners in 18 muffin cups.
