MULLED CIDER WITH CARDAMOM, BLACK PEPPER AND GINGER

Mulled Cider With Cardamom, Black Pepper and Ginger image

Traditional mulled cider is cozy and fragrant, but sometimes tastes a little too much like potpourri. In this version, toasted cardamom, allspice berries and black peppercorns provide sophisticated spiciness, while fresh ginger and citrus add fresh zing. It's a subtle but noticeable makeover, resulting in cider that's tangy and aromatic with a savory edge. If you want to spike it, don't pour the whiskey into the pot with the cider; the alcohol will burn off over the course of an hour or so. Instead, let guests add whiskey to their own mugs. If you've got a slow-cooker, this recipe is for you.

Time 55m

Yield 16 servings (about 16 cups)

Number Of Ingredients 11

3 tablespoons green cardamom pods
2 teaspoons whole black peppercorns
2 (3- to 4-inch) cinnamon sticks, plus extra for garnish, if desired
1 teaspoon allspice berries
1 (4- to 5-inch) piece fresh ginger, peeled
1/2 lemon, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
1/2 small orange, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
Generous pinch of kosher salt
1 gallon apple cider, preferably unfiltered
1 teaspoon vanilla extract
1 (750-milliliter) bottle rye whiskey (optional)

Steps:

  • Put the cardamom pods on a cutting board. Lay the flat of a chef's knife over them and gently smack the flat of the knife to lightly crush and crack the pods. Add the cardamom pods, peppercorns, cinnamon sticks and allspice berries to a medium skillet over medium-high heat. Toast the spices, shaking the pan often, until very fragrant, about 3 minutes.
  • Transfer the cinnamon sticks into a large Dutch oven or pot. Tie up the remaining spices into a cheesecloth bundle, and add that to the slow cooker as well. (If you don't have cheesecloth, you can use tea infusers or loose tea bags. You could also put the spices directly into the slow cooker, then strain the mixture as you serve.)
  • Cut the piece of peeled ginger in half lengthwise and smash each piece by laying the flat of the knife over it and smacking with the heel of your hand.
  • Put the ginger, lemon, orange, salt and apple cider into the Dutch oven. Bring it to a boil over high heat, then reduce the heat to maintain a low simmer and simmer for 30 minutes. (If you use unfiltered cider, some solids may rise to the top as you simmer; it's not necessary to skim them, but if you find them unappetizing, you can.)
  • Decrease the heat to its lowest setting. (Use a heat diffuser if you have one.) Stir in the vanilla. You can leave the cider on the stove for several hours. Set the rye whiskey by the stove so guests can spike their mugs, if desired, and set out cinnamon sticks and sliced citrus, so guests can garnish as they like.

SLOW-COOKER MULLED CIDER

Slow-Cooker Mulled Cider image

A slow cooker is an ideal way to make and serve a warm cocktail for a party: Throw the ingredients into the cooker several hours before guests arrive and the cider will bubble away, making the whole house smell wonderful. Reduce the heat before adding the rye whiskey so it maintains its kick. The toasted spices make the flavors so vibrant that the drink is delicious even without the whiskey. No slow cooker? This recipe is your stovetop option.

Time 3h10m

Yield 16 servings (about 19 cups)

Number Of Ingredients 11

3 tablespoons green cardamom pods
2 teaspoons whole black peppercorns
2 (3- to 4-inch) cinnamon sticks, plus extra for garnish, if desired
1 teaspoon whole allspice berries
1 (4- to 5-inch) piece fresh ginger, peeled
1/2 lemon, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
1/2 small orange, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
Generous pinch of kosher salt
1 gallon apple cider, preferably unfiltered
1 (750-milliliter) bottle rye whiskey, plus more if desired (optional)
1 teaspoon vanilla extract

  • Transfer the cinnamon sticks into a 6- to 8-quart slow cooker.
(At this point, put the slow cooker in the spot where you'd like to serve it, because it will become difficult to move once you've added all of the liquid.) Add the ginger, lemon, orange, salt and apple cider to the slow cooker. Cover, and cook on high for 3 hours.
  • Reduce the heat to warm. Add the rye whiskey and vanilla and stir to combine. You can leave the cider on warm for several hours, allowing guests to serve themselves, adding additional citrus slices and cinnamon sticks to their mugs, as desired.

MULLED APPLE CIDER WITH ORANGE AND GINGER

Mulled Apple Cider with Orange and Ginger image

Make and share this Mulled Apple Cider with Orange and Ginger recipe from Food.com.

Provided by Bev I Am

Categories     Beverages

Time 21m

Yield 8 cups, 8 serving(s)

Number Of Ingredients 5

8 cups unpasteurized apple cider
1 (3 inch) cinnamon sticks
10 whole cloves
1 navel orange, peeled and sliced crosswise
1 (2 inch) piece of peeled fresh ginger, cut into 6 slices

Steps:

  • In a large saucepan combine the cider, the cinnamon stick, the cloves, the orange and the ginger and simmer the mixture for 20 minutes.
  • Strain the mixture through a fine sieve into a heat-proof pitcher and serve the mulled cider warm.

Tips:

  • Choose the right cider. For the best flavor, use a fresh, high-quality cider. Avoid ciders that are overly sweet or have a strong vinegar taste.
  • Use whole spices. Whole spices will infuse the cider with more flavor than ground spices. If you don't have whole spices, you can use ground spices, but use half the amount.
  • Simmer, don't boil. Bring the cider to a simmer over medium heat, then reduce the heat to low and simmer for 15-20 minutes. Do not boil the cider, as this will drive off the alcohol and ruin the flavor.
  • Let the cider cool slightly before serving. This will allow the flavors to meld and develop.
  • Garnish with a cinnamon stick or orange peel. This will add a festive touch to your cider.

Conclusion:

Mulled cider is an easy and delicious way to warm up on a cold day. It's also a great way to celebrate the holidays. With its warm, spicy flavor, mulled cider is sure to put you in the holiday spirit. So next time you're looking for a warm and festive drink, give mulled cider a try. You won't be disappointed.
