2 tablespoons olive oil
1 (8 ounce) package sliced cremini mushrooms
1 onion, diced
3 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon dried thyme
1 ½ cups orzo
½ cup dry white wine
3 cups low-sodium chicken broth
1 cup frozen peas
½ cup freshly grated Pecorino-Romano cheese, or to taste
¼ cup heavy whipping cream
salt and freshly ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add mushrooms and onion and cook, stirring occasionally, until lightly browned, 10 to 15 minutes. Add garlic, oregano, and thyme; cook 1 minute, stirring often. Add orzo and cook until lightly toasted, 1 to 2 minutes, stirring often. Splash olive oil
1/2 onion, cut into small dice
1 cup semi-pearled farro
Big splash white wine
Kosher salt
About 2 cups warm lobster stock, plus more if needed
1 cup defrosted frozen peas
1 cup lump crabmeat, shells picked
1/2 cup grated Parmesan
2 tablespoons butter
1 tablespoon nice pea sprouts
3 or 4 stems fresh marjoram, leaves minced
1 bunch fresh flat-leaf parsley, leaves chopped
1 small bunch chives, minced
1/2 lemon, zested and juiced

Steps:

  • Add a splash of olive oil to a medium saucepot and heat over medium heat. Add the onions and saute until translucent, about 5 minutes. Add the farro and toast for another few minutes until it smells nutty. Add the white wine and reduce by half. Season with salt and stir.
  • Start to add the lobster stock by the ladleful, stirring occasionally and cooking until starting to thicken. Keep adding more stock as the liquid gets absorbed. Once thickened, after about 30 minutes, stir in the peas, crab, Parmesan, butter, pea shoots, marjoram, parsley, chives and lemon zest and juice. Use a wooden spoon to whip by hand until creamy, a couple of minutes. Serve in bowls.

¼ cup extra-virgin olive oil
10 oz cremini
2 leeks, green parts and roots removed, haled lengthwise, then sliced into half moons and soaked in cold water to remove grit
2 cloves garlic, smashed
½ tsp kosher salt
1 cup farro, rinsed
1 cup dry white wine
3 cups low-sodium chicken
⅓ cup freshly-grated Parmigiano-Reggiano
⅓ cup freshly grated Pecorino Romano
4 Tbsp unsalted butter
¾ cup frozen peas, thawed

  • Heat a 3 1/2-quart pan over medium-high heat. Add 2 tablespoons of the oil and heat for 30 seconds. Add the mushrooms to the pan and cook, stirring often, until golden brown and all of the water cooks out, 8 to 10 minutes. Remove the mushrooms to a plate with a slotted spoon. Add the remaining 2 tablespoons oil and the leeks. Reduce the heat to medium and cook the leeks, stirring often, until soft and fragrant, about 3 minutes. 4 cups vegetable broth
4 cups low-sodium vegetable broth
3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter, divided
1 medium yellow onion, minced
4 cloves garlic, crushed and minced
½ teaspoon red pepper flakes
sea salt and cracked black pepper to taste
2 cups cremini mushrooms, sliced
¾ cup shiitake mushrooms, sliced
1 teaspoon chopped fresh thyme
½ teaspoon ground thyme
2 cups Arborio rice
1 large bay leaf
½ cup dry white wine
1 cup frozen peas
1 cup shredded Pecorino Romano cheese
⅓ cup chopped fresh parsley

Steps:

  • Bring regular and low-sodium vegetable broth to a slow boil in a medium pot over medium heat. Reduce heat slightly and keep warm.
  • Heat olive oil and 1 tablespoon butter in a 12-inch skillet over medium heat. Add onion, garlic, pepper flakes, and a pinch of salt and pepper. Cook, stirring often, for 3 to 4 minutes.

  • Remove from the heat once the liquid is absorbed and the rice is tender, yet firm to the bite. Stir in Pecorino Romano cheese and parsley. Taste and adjust salt and pepper if needed.

10 g dried mushrooms
1 onion
2 tablespoons oil
25 g butter
1 garlic clove
350 g rice
125 ml white wine
1 1/3 liters vegetable stock
250 g mushrooms
200 g peas
2 tablespoons parsley

Steps:

  • Put the dried mushrooms in a bowl and pour over 100ml hot water. Leave to soak for 30 minutes. Drain, reserving the liquid, and chop.
  • Cook the onion in 1 tbsp oil and half the butter, until soft. Add the garlic and cook for another minute, then add the soaked mushrooms and cook for 2 minutes, stirring.
  • Add the rice and stir over a low heat for 1 minute, then add the white wine, if using, and simmer until it has almost evaporated.
  • Add the reserved mushroom liquid and the hot stock, a ladleful at a time and stir. Make sure the hot stock has been almost absorbed before you add the next ladleful. Stir frequently and continue cooking for 12 minutes.
  • While the risotto is cooking, heat the rest of the oil and butter in a frying pan and cook the sliced fresh mushrooms until they shrink. Add to the risotto with the pan juices and the peas and continue cooking, adding the stock, a ladleful at a time, until the rice is tender and creamy.
  • Stir in half the chopped parsley. Serve the rest sprinkled on top.

1/2 cup grated lemon rind
1/2 cup fresh thyme leaves

4 quail
2 teaspoons butter
1 onion, peeled and minced
6 cups chicken broth, homemade or low-sodium canned
1 1/2 cups Arborio rice
1 cup white wine
1 1/2 cups fresh peas
1 cup fresh morel mushrooms
1/2 cup chopped Italian flat-leaf parsley leaves

Steps:
