BEEF MUSHROOM BARLEY SOUP

Beef Mushroom Barley Soup image

Family favorite. It kind of turns into a type of stew as the barley soaks up much of the beef stock. Best part is that it gets better with age, so make plenty and enjoy throughout the week! It's always better the second day, so you might want to cook it one day, refrigerate it overnight, and then cook it again the next day.

MUSHROOM-BARLEY SOUP

Mushroom-Barley Soup image

Soup made without meat or meat broth can be insipid. That's why most people think pea soup needs ham and mushroom-barley soup needs beef. But it's possible to make a satisfying, even hearty, vegetarian soup if you choose your ingredients carefully and extract every bit of flavor from them. Enter this mushroom-barley soup, a vegetarian dish with real body, texture and depth of flavor. The key ingredient here is dried porcini, which can be reconstituted in hot water in less than 10 minutes, giving you the best-tasting mushrooms you can find outside the woods and an intensely flavored broth that rivals beef stock. Don't forget to toast the barley while really browning the mushrooms and carrots - it lends a deep warmth.

SLOW COOKER 5-MUSHROOM BARLEY SOUP

Slow Cooker 5-Mushroom Barley Soup image

This hearty version of an American classic soup is inspired by 'Chef Jakey' of the long-gone 'Steak Pub' in 1970's Monticello, NY. Long ago, I lived and worked in the upstate New York resort town of Monticello. As an electrical contractor, one of my clients was an upscale restaurant called 'The Steak Pub.' They had an Asian head chef named 'Jakey.' During winter months when business was slow, we spent hours doing electrical upgrades. Inevitably, we would be there at lunch time, and Jakey would invite us to his specialty, Mushroom Barley Soup, with hot sourdough. The addition of the cream of mushroom soup gives a creamier end result. Serve hot with sourdough or other fine bread, or garlic rounds.

Tips:

  • Soak the barley: Soaking the barley overnight or for at least 4 hours before cooking helps reduce cooking time and improves its texture.
  • Use a variety of mushrooms: Don't limit yourself to one type of mushroom. Experiment with different varieties such as cremini, shiitake, or oyster mushrooms to add depth of flavor to the soup.
  • Sauté the mushrooms: Sautéing the mushrooms before adding them to the soup enhances their flavor and gives them a slightly caramelized texture.
  • Use a flavorful broth: The broth is the backbone of the soup, so make sure to use a high-quality broth that is rich in flavor. You can use chicken, beef, or vegetable broth, depending on your preference.
  • Add vegetables: Vegetables like carrots, celery, and onions add sweetness, texture, and nutrients to the soup. Feel free to add other vegetables that you like.
  • Season to taste: Don't forget to season the soup with salt and pepper to taste. You can also add other herbs and spices, such as thyme, rosemary, or paprika, to enhance the flavor.

Conclusion:

Mushroom barley soup is a hearty, flavorful, and nutritious meal that is perfect for a cold day. With its combination of tender barley, earthy mushrooms, and a rich broth, this soup is sure to warm you up from the inside out. It's also a great way to use up leftover vegetables.
