  • In a small nonstick skillet, saute the mushrooms until tender. Add the garlic; cook for 1 minute. 1 (3 lb) beef tenderloin (the beef tenderloin can be a bit bigger)
1 tablespoon olive oil (can use a little more)
1/2-1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup butter (no subs!)
1 medium onion, thinly sliced
1 -2 tablespoon fresh minced garlic (or to taste)
1 (8 ounce) package sliced fresh mushrooms
1/2 cup dry red wine
2 teaspoons Worcestershire sauce
1 teaspoon dried Italian seasoning
1 teaspoon louisiana hot sauce
1 pinch black pepper (or use up to 1/4 teaspoon)
1 cup beef broth
1 -2 teaspoon flour

  • Line a medium roasting pan with foil.
  • Lightly coat the tenderloin with olive oil; place on a plate and let sit out on the counter until almost room temperature (this might take several hours, this is an important step so do not omit, this will relax the meat fibers and make for a more tender and juicy beef roast!).
  • Season the beef with salt and black pepper (nothing else!).
  • Place in the roasting pan and bake uncovered in a 450 degree oven for 15 minutes.

Valentine's Day or any other day, this makes a romantic dinner for two. On Valentine's Day, try cutting some heart-shaped vegetables using a small heart-shaped pastry cutter and your vegetables of choice - butternut squash, carrot, white turnip, are all easy to use for this type of vegetable preparation. Simply slice the vegetable (use a Japanese mandoline if you have one) approximately one-eighth thick. Blanch in boiling, salted water for 60 seconds. Remove; cool down immediately and then cut out the heart shape vegetables. It is far easier to cut the vegetables with a heart-shaped cutter when they have been blanched. Toss them in a little melted butter in a non-stick pan for a couple of minutes. Season with salt and pepper, sprinkle with chopped parsley and arrange on your plate.

  • In a fry pan over medium high heat, add a splash of olive oil and half a teaspoon of butter.
  • Season the beef tenderloin with salt and pepper and add to pan.
  • Add the clove of garlic and sprig of fresh thyme.
  • Slowly roast the beef tenderloin on all sides, turning routinely every 2 to 3 minutes.
  • To cook the beef tenderloin medium, this should take approximately 10 to 12 minutes.
  • Once roasted nicely, golden brown, remove the beef tenderloin and keep warm off to one side.
  • Pick out the garlic and thyme, return the pan to the heat, and add a splash of cognac and flame so as to allow the alcohol to burn off.
  • Add the chicken stock and reduce by two- thirds, then add the cream and simmer gently to reduce and thicken by half.
  • Season with salt and pepper and keep sauce warm on one side.
  • Using a clean fry pan, over high heat, quickly sauté your choice of assorted mushrooms that have been picked over and cut into hazel nut size pieces.
  • Sauté in a splash of olive oil and butter.
  • Season with salt and pepper; this should take 3 to 4 minutes for the mushrooms to soften and release some juices.

1/4 tsp. salt
3/4 tsp. black pepper
3/4 tsp. dried thyme
2 cups crumbled blue cheese
1/3 cup bread crumbs
Butcher's twine or string
1 Tb. olive oil
1 cup ruby port wine
1 cup chicken broth
1 tsp. cornstarch dissolved in 1 tsp. water
For the barley pilaf:
1 cup dried mushrooms 2 Tbs. olive oil
1 large onion, diced
1 pound pearled barley
1 cup dry white wine
4 cups chicken broth
7 ounces rinsed baby spinach
1 cup grated Parmesan cheese

Steps:

  • Prepare beef and sauce: Slit tenderloin lengthwise, almost but not all the way through. Sprinkle with salt and 1/2 tsp. each pepper and thyme. Mix cheese, bread crumbs and 1/4 tsp. each pepper and thyme; stuff pocket with cheese mixture. Tie tenderloin crosswise at 1 1/2-inch intervals. Coat with oil and sprinkle with more salt and pepper; set aside. Adjust oven rack to lower-middle position and heat oven to 425 degrees. Heat a large, heavy-bottomed roasting pan over two burners on medium-high heat. When pan is very hot, turn on exhaust fan and sear roast until well browned, about 2 minutes on all 4 sides; transfer to a cookie sheet. Reduce heat to low; add port, scraping roasting pan to loosen brown bits. Pour port into a saucepan with 1 cup broth. Simmer until reduced to 1 cup; whisk in cornstarch to thicken. Set aside. Prepare pilaf: Place mushrooms in a bowl, cover with3 cups of water and agitate to loosen dirt. Let sit 30 minutes. Put mushrooms in a fine mesh strainer; reserve liquid in bowl. Wash mushrooms under running water. Set aside. Pour mushroom liquid through strainer into another bowl. Add 2 Tbs. oil to the roasting pan. Sauté onion until well browned, 5 minutes. Add barley. Sauté; stir constantly,1 to 2 minutes. Add mushrooms, then wine. Simmer until nearly evaporated; add reserved mushroom liquid and4 cups broth, and bring to a simmer. To cook: Set a wire rack over the barley; set beef on rack. Cook, uncovered, until a meat thermometer inserted in thickest portion registers 120 (medium-rare) or 125 (medium), 30 to 35 minutes. Remove roast from rack and rack from pan. Let roast rest for about 25 minutes. Return barley to oven; cook until liquid evaporates and barley is tender, about 20 minutes. Remove from oven; stir in spinach and Parmesan until spinach wilts. To serve: Reheat port wine sauce. Cut roast into 1-inch-thick slices. Serve with sauce and barley pilaf.

Steps:

  • Mix the butter, chives, tarragon, and garlic together in a bowl until well-blended. Place the butter mixture on a large piece of plastic wrap. Wrap the butter with the plastic and shape it into a log about 1-inch thick. Place the log in the refrigerator to chill.
  • Season the beef tenderloin steaks with salt and black pepper. Place the dried mushrooms in a spice grinder or food processor. Process until the mushrooms are finely ground. 1/3 cup vegetable oil
1/2 cup red wine
1 bay leaf
2 teaspoons Kitchen Bouquet
1/3 cup soy sauce
2 cups sliced mushrooms

2 teaspoons butter
1 tablespoon Wondra Flour
2 2/3 lbs trimmed beef tenderloin

Steps:

  • Combine garlic, thyme, oil, wine, bay leaf, Kitchen Bouquet and soy sauce. Pour over tenderloin and marinade overnight. Remove tenderloin from refrigerator about 30 minutes prior to roasting to allow meat to relax.
  • Preheat oven to 425. Place tenderloin in open roasting pan and bake 25-30 minutes or until internal temperature reaches 125 (medium rare). Baste with marinade 2-3 times during roasting.
  • Let roast rest loosely covered and while it rests, pour marinate into small saucepan and boil.
  • In separate pan, melt butter and saute onion and mushrooms until onions are translucent and mushrooms give off their juices. Add flour to mixture and stir. Pour boiling marinade into pan with mushrooms and onions and stir to thicken. As mixture comes to a boil, reduce heat.

  • Heat oven to 425°F. Rub beef with oil; sprinkle with pepper. Place beef on rack in shallow roasting pan, or place diagonally in 15x10x1-inch pan. Insert ovenproof meat thermometer so tip is in center of thickest part of beef.

Reduce heat to med and continue to cook, until vegetables are deeply browned and sticky, about 10 minutes. Stir in garlic and cook until fragrant, 30 seconds. Slowly stir in Madeira and cook, scraping bottom of skillet to loosen any browned bits, until liquid has evaporated, 2 to 3 minutes. Transfer onion-mushroom mixture to plate and cool to room temperature. For the Roast: Season cut side of roast with kosher salt and pepper. Spread cooled stuffing mixture over interior of roast, leaving 1/2-inch border on all sides; lay spinach on top of stuffing. Roll roast lengthwise and tie. In small bowl, stir together 1 tablespoon olive oil, 11/2 teaspoons kosher salt, and 11/2 teaspoons pepper. Rub roast with oil mixture and let stand at room temperature for 1 hour. Adjust oven rack to middle position and heat to 450. Heat remaining 2 tablespoons olive oil in 12-inch skillet over medium-high heat until smoking. Add beef to pan and cook until well browned on all sides, 8 to 10 minutes total. Transfer beef to wire rack set in rimmed baking sheet and place in oven. Roast until instant-read thermometer inserted into thickest part of roast registers 120 degrees for rare, 16 to 18 minutes, or 125 degrees for medium-rare, 20 to 22 minutes. For the Butter: While meat roasts, combine butter ingredients in small bowl. Transfer tenderloin to cutting board; spread half of butter evenly over top of roast. Loosely tent roast with foil; let rest for 15 minutes. Cut roast between pieces of twine into thick slices. Remove twine and serve with remaining butter passed separately.

1 tablespoon olive oil
2 large garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
3 lbs well-trimmed beef tenderloin, center cut
3 tablespoons butter
1 lb mixed fresh mushrooms, stems removed and cut in half if large (shiitake,cremini and oyster)
1/4 cup finely chopped shallot
1 cup good port wine
1 (13 3/4-14 1/2 ounce) can ready-to-serve beef broth
1/4 cup coarse-grain dijon-style mustard
1 tablespoon cornstarch, dissolved in 2 tbsp. water
1 tablespoon butter, softened (optional)

Steps:

  • Heat oven to 425 degrees F.
  • Combine olive oil, garlic, salt, and pepper. Press evenly into surface of beef. Heat large nonstick skillet over medium-high heat until hot. Brown beef evenly on all sides to sear. Transfer to rack in shallow roasting pan. Insert meat thermometer so tip is centered in thickest part of roast, not resting in fat. Do not add water or cover. Roast in 425-degree F. oven about 30 to 35 minutes for medium-rare to medium doneness.
  • Meanwhile, in the same skillet, heat 1-1/2 tablespoons butter over medium-high heat until hot. Add half of mushrooms and the shallots. Cook and stir until mushrooms are tender. Remove from skillet. Repeat with remaining butter and mushrooms. Set aside.
  • In same skillet, bring port wine to a boil over high heat. Cook 5 to 7 minutes or until almost syrupy (reduced to about 2 tablespoons). Stir in broth, mustard, and cornstarch mixture. Cook until slightly thickened and bubbly, stirring occasionally. Return mushrooms to sauce.
  • Remove roast from oven when meat thermometer registers 135°F degrees. Transfer roast to carving board. Tent loosely with aluminum foil. Let stand 15 minutes. (Temperature will continue to rise about 10 degrees to reach 145 degrees F. for medium rare.)
  • Carve roast into slices. If desired, immediately before serving, stir 1 tablespoon softened butter into sauce. Serve with roast.

  • 1. Pat the steaks dry with a paper towel. Season the steaks with half of the salt and pepper, keeping the remaining for later use.. 2. Turn the grill on. Select the program and press . Lightly grease the cooking plates with cooking spray. Once the purple indicator light has stopped flashing, place the steaks on the grill and close the lid. 3. Cook until the indicator light has changed to the color of desired doneness; yellow for rare, orange for medium or red for well done. Transfer the steaks to a plate; tent with foil. Rest for 5 minutes before serving. 4. Meanwhile, melt the butter in a large, nonstick skillet set over medium heat. Add the mushrooms, garlic, thyme and remaining salt and pepper. 1 Cup chopped leek (white and pale green parts only)
4 tsp minced garlic
4 cups sliced mixed fresh wild mushrooms (such as oyster, stemmed portobello and stemmed shiitake)
2/3 cup dry Marsala
2/3 cup beef stock or canned broth
4 8-ounce beef tenderloin steaks
Olive Oil

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over meduim-low heat. Add leek and garlic and saute until almost tender, about 5 minutes. Increase heat to medium-high. Add mushrooms and saute until golden brown, about 6 minutes. Add Marsala and stock and boil until liquid is reduced by half, about 4 minutes. Prepare barbecue (medium-high heat) or preheat broiler. Brush steaks with olive oil. Sprinke with salt and pepper. Grill to desired doneness, about 4 minutes per side for medium-rare. Transfer to platter and tent with foil. Bring sauce to simmer in heavy large skillet. Remove skillet from heat. Gradually whisk in remaining 2 tablespooon butter. Add reserved mushrooms and stir over low heat until mushrooms are heated through, about 2 minutes. Season to taste with salt and pepper. Place steaks on plates. Spoon sauce and mushrooms over and serve.

1 puff pastry sheet, thawed
8 oz beef tenderloin filet
1 Tbsp sweet butter, unsalted
salt, kosher variety to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 3. Lightly dust a clean surface with some flour and roll out the puff pastry to a 10x10 inch square (25x25cm).
  • 4. Use a cookie cutter to make 3-inch (7.5cm) circles; you should have about 8 circles.
  • 5. Place on a parchment-lined baking sheet and dock using a fork.
  • 6. Chef's Note: Docking is just a fancy term for poking a lot of holes in the dough.
  • 7. Place in the preheated oven until nice and brown, about 12 to 15 minutes.
  • 8. Chef's Tip: If they begin puffing up too much, open the oven and dock them a second time.
  • 9. Remove from the oven, and reserve.
  • 10. Add some salt and pepper, to both sides of the tenderloin.
  • 11. Add the butter to an ovenproof skillet set over medium-high heat.
  • 12. Add the tenderloin.
  • 13. Cook about 3 minutes per side, or until nice and brown.
  • 14. Add the skillet to the preheated oven, and cook until rare to medium rare. From 3 to 5 minutes.
  • 15. Chef's Note: In my option, with a recipe like this, it can't be too rare, but that's just me.
  • 16. Remove from oven and allow the tenderloin to rest for 10 minutes.
  • 17. Cut into thin slices.
  • 18. THE ASSEMBLY
  • 19. Place a puff pastry round onto a serving plate.
  • 20. Add some of the mushrooms to the top of the pastry.
  • 21. Add a few slices of beef tenderloin.
  • 22. Add a bit of the beef/wine reduction sauce to the top.
  • 23. PLATE/PRESENT
  • 24. Serve to your guests while still nice and warm. Enjoy.
  • 25. Keep the faith, and keep cooking.

¼ cup Alouette® Garlic & Herbs, or Alouette® Savory Vegetable Spreadable Cheese, or Alouette® Creamy Onion & Shallots Spreadable Cheese
½ cup milk
1 tsp. minced fresh parsley, if desired

Steps:

  • Heat broiler. Coat all sides of tenderloin with 1 tsp. of the olive oil. Place on broiler pan. Season to taste with salt and pepper. Broil 4 inches from heat for 6 minutes or until well-browned. Turn. Broil 6 to 8 minutes or until desired doneness. Meanwhile, heat remaining olive oil and the butter in small skillet over medium heat. Add shallot; cook 1 minute. Add mushrooms. Steps:

  • Sprinkle steaks with 1/4 tsp. salt and 1/8 tsp pepper. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add steaks to pan' saute 3 minutes on each side or until desired degree of doneness. Transfer steaks to serving platter. Heat pan over medium-high heat. Add butter to pan, swirling to coat. Cook 15 seconds or until foam subsides. Add garlic to pay; saute 30 seconds, stirring constantly. Add mushrooms, 1/2 tsp chopped thyme, remaining salt and pepper to pan. Saute 3 minutes or until mushrooms are tender, stirring frequently. Stir in vinegar, 1 tbsp. water, soy sauce; cook 1 minute or until liquid almost evaporates. Spoon mushroom mixture over steaks. 2 teaspoons seasoned salt
1 beef tenderloin roast (5 pounds)
9 bacon strips, finely chopped
3 cups sliced fresh mushrooms
4 tablespoons butter, divided
4 medium onions, chopped (about 3 cups)
9 garlic cloves, minced
1/3 cup tomato paste
6 cups beef stock
2-1/4 cups dry red wine
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425°. Rub thyme and seasoned salt onto all sides of roast. Place tenderloin on a rack in a shallow roasting pan. Roast 50-60 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, in a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally.
