MUSHROOM MEATLOAF

Mushroom Meatloaf image

Trust me this isn't an ordinary meat loaf. My husband hates onions and mushrooms but he doesn't even know they are in it! Both of us hate traditional meat loaf, so I surfed through the internet until coming across something without catsup. Once I varied the ingredients a little bit, it turned out awesome.if you have a Magic Bullet (60 bucks at Wal-mart, use it to make bread crumbs instead of tearing, the bread, it comes out a lot nicer. I also use double the amount of Worcestershire sauce in mine because I like it a lot.

MEATLOAF WITH MUSHROOM GRAVY(COOK'S COUNTRY)

Meatloaf With Mushroom Gravy(Cook's Country) image

Baked the meatloaf in the skillet that you sauteed mushrooms in, and once the loaf was resting, used the same skillet (and meat drippings) to build our gravy. If you're short the 2 tablespoons of meatloaf drippings needed to make the gravy, supplement them with melted butter or vegetable oil.

Time 2h9m

Yield 1 loaf, 6-8 serving(s)

Number Of Ingredients 16

1 cup water
1/4 ounce dried porcini mushrooms, rinsed
16 saltines
10 ounces white mushrooms, trimmed
1 tablespoon vegetable oil
1 onion, chopped fine
salt and pepper
4 garlic cloves, minced
1 lb ground pork
2 large eggs
1 tablespoon Worcestershire sauce
3/4 teaspoon Worcestershire sauce
1 lb ground beef, 85 percent lean
3/4 teaspoon fresh thyme, minced
1/4 cup all-purpose flour
2 1/2 cups low sodium chicken broth

  • 3. Heat oil in 12-inch nonstick skillet over medium-high heat until shimmering. Add onion and cook until browned, 6 to 8 minutes. Stir in processed mushrooms and 1/4 teaspoon salt and cook until liquid evaporates and mushrooms begin to brown, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. 8 cremini mushrooms, (baby portobellos), chopped
8 shiitake mushrooms, chopped
1 shallot, chopped
Salt and pepper
1 1/3 pounds ground turkey, the average weight of 1 package
3 or 4 sprigs fresh sage, leaves chopped, about 2 tablespoons
1 tablespoon Worcestershire sauce, eyeball it

2 tablespoons all-purpose flour

Simmer gravy until it reaches desired thickness, and pour over patties, reserving a little to pass at the table.

SWISS, BACON, MUSHROOM MEATLOAF

Swiss, Bacon, Mushroom Meatloaf image

Swiss cheese with mushrooms & bacon is my favorite burger topping. So I thought why not make it a meat loaf. I had a lot of fresh herbs on hand so I used them but you could sub dry ones. I put a lot of vegetables in it and that keeps it moist. You can double it if you want very easily.

MICROWAVE MUSHROOM MEATLOAF

Microwave Mushroom Meatloaf image

Spending time in an extended-stay hotel with just a microwave and stovetop for cooking, along with minimal cookware, led me to be a bit creative at mealtime. I was craving meatloaf and came up with this recipe from foods I had on hand leftover from earlier meals. I was pleased with how it turned out considering my limited options. And it wasn't a reheated frozen dinner either!

MUSHROOM SWISS MEATLOAF

Mushroom Swiss Meatloaf image

My husband loves mushroom swiss burgers. I created this bunless alternative and now he has leftovers the next day. For meatloaf sandwich lovers, this is perfect! Just slap it between two pieces of bread!

Provided by melijohns

Categories     Meat

Time 1h15m

Yield 1 loaf, 8 serving(s)

Number Of Ingredients 10

1 1/2 lbs ground beef
1 tablespoon Worcestershire sauce
2 eggs
3/4 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon ground black pepper
1 vidalia onion, onion. sliced thin
8 slices real swiss cheese
8 ounces button mushrooms (wiped clean and stems removed)
2 tablespoons butter

Steps:

  • In a skillet, melt butter and saute onion until no longer opaque (you can adjust the amount to 1/2 onion if your family doesn't love onions like mine).
  • Slice mushrooms and add, cooking until done. (You may substitute a 4 oz. can of mushrooms, drained.)
  • While onions are cooking, mix ground beef, eggs, bread crumbs, Worcestershire sauce, salt and pepper. Stir well.
  • Tear off a sheet of aluminum foil, approximately the size of a 9x13 pan.
  • Spread meat mixture onto foil in the shape of the rectangle. Place cheese slices down the middle crosswise (down the short center). Pour on onions and mushrooms.
  • Fold edges of meat in towards the center. Seal seam.
  • Flip the meat over into a baking dish, such as a 9x13 glass dish, seam side down and make sure ends and seams are sealed and no filling is exposed.
  • Bake in a 350 degree oven for 45-55 minutes. This can be served alone, with ketchup (for a burger taste), or even with brown gravy, if desired.

Tips:

  • Use a variety of mushrooms. This will give your meatloaf a more complex flavor and texture.
  • Don't be afraid to experiment with different seasonings. The possibilities are endless!
  • Cook the meatloaf until it is cooked through. This will ensure that it is safe to eat and that the mushrooms are cooked through.
  • Let the meatloaf cool for a few minutes before slicing and serving. This will help it hold its shape.
  • Serve the meatloaf with your favorite sides. Mashed potatoes, green beans, and gravy are all popular choices.

Conclusion:

Mushroom meatloaf is a delicious and hearty dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste. With a little creativity, you can create a mushroom meatloaf that your family and friends will love.
