MUSHROOM PILAF
While combing through my grandmother's recipes, I ran across something I hadn't seen since childhood. Wishing to revive my memories of Sunday dinners past, I prepared what Grandma called her "pretty pilaf." I should have doubled the recipe! Not only was it a hit, it was just as I remembered it back in Waukegan, Illinois, where I grew up.

This recipe is based on one from Rachael Ray, but I changed it around quite a bit to suite our tastes and what I had on hand. Anyway, this works on its own as a main dish or as a side dish with beef or chicken. It's quite hearty!

- Use Fresh Mushrooms: Fresh mushrooms have a more intense flavor and texture than dried mushrooms. If you can, try to use fresh mushrooms for this recipe.
- Sauté the Mushrooms Properly: Sautéing the mushrooms until they are golden brown will help develop their flavor and give them a slightly crispy texture.
- Use a Good Quality Olive Oil: A good quality olive oil will add a delicious flavor to the dish. Extra virgin olive oil is the best choice.
- Don't Overcook the Pasta: Al dente pasta is the goal. Pasta that is overcooked will be mushy and unpleasant to eat.
- Season the Dish Generously: Don't be afraid to season the dish generously with salt and pepper. This will help to bring out the flavors of the other ingredients.
- Garnish with Fresh Herbs: Fresh herbs like parsley, basil, or thyme can add a pop of color and flavor to the dish. Add them just before serving.
